Cooking Instructions
Step 1
Gently rinse the cleaned mackerel fillet under cool running water to remove any surface impurities. Pat it thoroughly dry with paper towels. Ensuring the fish is dry is crucial for preventing oil splatters and achieving a crispier sear.
Step 2
In a small bowl, combine 1 teaspoon of traditional miso paste, 1 teaspoon of commercial plum extract, and 1/2 teaspoon of minced garlic. Stir well with a spoon until a smooth paste forms. The savory depth of the miso harmonizes beautifully with the sweet and tart notes of the plum extract, effectively masking any fishiness and enhancing the overall flavor profile.

For a creamier texture and richer flavor in the glaze, you can optionally add a very small amount of mayonnaise (about 1/4 teaspoon) and mix it into the paste. Mayonnaise can further enhance the taste and also help prevent the glaze from burning too quickly. This step is entirely optional.
