Eggs and Vegetables
  • 1/2 flat of eggs (approx. 15 eggs)
  • 1/2 onion
  • 2 chili peppers (e.g., jalapeños or red chilies)
  • 1 handful of green onions (approx. 5-7 stalks)

Magic Soy Sauce Mixture
  • 1 cup water (200ml)
  • 1 cup soy sauce (200ml)
  • 5 Tbsp corn syrup or oligodang (75ml)
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, prepare the vegetables that will make your Magic Soy Sauce Eggs so delicious. Finely mince the onion. Remove the seeds from the chili peppers and chop them finely. Wash and finely chop the green onions as well.

Step 2

Place the prepared vegetables in a bowl. Add all the sauce ingredients: water, soy sauce, corn syrup, and sesame seeds for a nutty flavor. Mix everything well to create your flavor-packed marinade. If you prefer a spicier kick, feel free to adjust the amount of chili peppers.

Step 3

Now it’s time to boil the eggs. In a pot, add 1 cup of water and bring it to a boil. Once boiling, add 2 tablespoons of salt and 1 tablespoon of vinegar. The vinegar helps make the eggshells easier to peel. Carefully add the eggs to the boiling water and cook for about 6 minutes and 30 seconds to 7 minutes, depending on your preference. Cooking for 6 minutes and 30 seconds will result in a jammy yolk that flows when cut, while 7 minutes will give you a firmer, almost hard-boiled yolk. Immediately transfer the boiled eggs to cold water to cool them down. Once all the shells are peeled, gently place the eggs in the prepared marinade and swirl them around for about 1 minute. This helps center the yolk beautifully.

Step 4

Transfer the marinated eggs to an airtight container and let them refrigerate and mature for at least 5 hours, or preferably overnight. The longer they marinate, the deeper and more delicious the flavor becomes. Serve your matured Magic Soy Sauce Eggs over rice for a delightful meal, or enjoy them as a side dish – they’re so good, you’ll find yourself finishing a whole bowl of rice in no time!
