Mandu Jeon Ingredients
  • Gohyang dumplings, 12 pieces (or your favorite type of dumplings like water dumplings or king dumplings)
  • 1 Cheongyang chili pepper (or red chili, green onion, chives, or garlic chives)
  • 1.5 Tbsp Korean pancake mix (buchim garu)
  • 1/2 cup water
  • 2 Tbsp cooking oil

Dipping Sauce
  • 1 Tbsp water
  • 1 Tbsp soy sauce
  • 1/2 Tbsp vinegar
  • (Optional) Pinch of red pepper flakes

Cooking Instructions

Step 1

I’ve prepared ‘Gohyang dumplings’ for this recipe. However, feel free to use any type of dumplings you prefer, such as water dumplings or king dumplings that are readily available. Prepare about 12 pieces.

Step 2

To add a spicy kick, halve the Cheongyang chili pepper, remove the seeds, and then finely mince it. If you prefer a milder flavor, you can use a red chili pepper, or finely chop green onions, chives, or garlic chives to add a delicious touch. Prepare them according to your preference.

Step 3

In a bowl, combine 1.5 tablespoons of Korean pancake mix with 1/2 cup of water. Whisk until smooth, ensuring there are no lumps, to create a gentle batter. The consistency should be neither too thick nor too watery.

Step 4

Prepare a non-stick frying pan. Arrange the dumplings in the pan, leaving a small gap between each one so they don’t stick together. Make it visually appealing.

Step 5

Evenly drizzle 2 tablespoons of cooking oil into the spaces between the dumplings. This will help achieve a crispy texture similar to fried dumplings. It’s crucial to maintain a low heat from start to finish. High heat can cause the dumplings to burn.

Step 6

Once the oil in the pan starts sizzling, pour the prepared batter into the spaces between the dumplings, filling the gaps. Spread it thinly, as if connecting the dumplings. Then, sprinkle the minced Cheongyang chili pepper (or your chosen vegetables) evenly over the top for garnish and added flavor.

Step 7

Cover the frying pan with a lid and continue to cook over low heat for about 10 minutes. The batter used here is quite thin, so it won’t easily stick to the pan or burn, allowing you to cook with peace of mind. Please be patient.

Step 8

While the Mandu Jeon is cooking deliciously, let’s make the dipping sauce. In a small bowl or ramekin, combine 1 tablespoon of water, 1 tablespoon of soy sauce, and 1/2 tablespoon of vinegar. Mix well. If you prefer a spicier taste, you can add a pinch of red pepper flakes for extra flavor.

Step 9

After 10 minutes, lift the lid to reveal a beautifully cooked Mandu Jeon. The exterior will be golden brown and crispy, while the inside remains wonderfully moist. It’s a visual feast that will make your mouth water!
