  • Whole black peppercorns 1 Tbsp
  • Ginger 2 slices
  • Whole garlic cloves 3 (sliced)
  • Cinnamon sticks 2 pieces
  • Licorice root slices 2 pieces
  • Shrimp powder 2 Tbsp
  • Bonito flakes 1/4 cup
  • Sake or Mirin 2 Tbsp
  • Honey 2 Tbsp
  • Natural broth 1L (or dashi stock)

Shrimp Marinade Ingredients

  • Fresh raw shrimp 25 pcs
  • Homemade soy sauce blend (from above)
  • Red chili pepper 1 (sliced diagonally)
  • Green chili pepper 1 (sliced diagonally, for extra heat)
  • Bay leaves 3

Cooking Instructions

First, let’s prepare the base for our delicious Saewoo Jang: the special homemade soy sauce blend. Place the natural flavoring ingredients for the broth into a mesh bag and simmer them in 1L of water to create a rich, flavorful broth. You can also use a mixture of dried anchovies, kelp, and shiitake mushrooms.

Remove the mesh bag from the broth. In a pot, combine the regular soy sauce, malt soy sauce, sake (or mirin), honey, and shrimp powder. Stir well to dissolve. Place the ginger, cinnamon sticks, licorice root, bonito flakes, and sliced garlic cloves into another mesh bag and add it to the pot along with the broth. Simmer gently over medium-low heat until the soy sauce mixture reduces to about two-thirds of its original volume. Taste the sauce; if it’s too bland, add a touch of Korean soup soy sauce or regular soy sauce. If it’s too salty, add more honey or a little water to adjust the flavor to your preference.

Now, it’s time to prepare the shrimp. Rinse the fresh raw shrimp thoroughly under cold running water. Trim off the antennae and any hard legs; this makes the shrimp easier to eat later. However, if you prefer, you can also cut them off with scissors just before serving.

Wash the red and green chili peppers and slice them diagonally. Adding chilies not only enhances the visual appeal but also adds a wonderful depth of flavor to the Saewoo Jang. Include the whole black peppercorns and bay leaves for extra aroma. The homemade soy sauce blend should be slightly warm, not completely cooled, at this stage.

Place the prepared shrimp in a clean container. Pour the slightly warm soy sauce blend over the shrimp, ensuring they are fully submerged. Add the sliced chili peppers, whole black peppercorns, and bay leaves to the container. Seal the container and refrigerate for about 10 days until the shrimp turn a beautiful deep brown color. For a more intense soy flavor, after about 4 days, you can separate the soy sauce, re-boil it, let it cool, and then pour it back over the shrimp.

After approximately 5 days of marinating, and after re-boiling and cooling the sauce as described in the previous step, the Saewoo Jang has transformed into a rich, appetizing dark brown hue. Arrange the marinated shrimp attractively on a serving plate, drizzling some of the flavorful soy sauce over them. Garnish with toasted sesame seeds and finely chopped green onions to complete this exquisite homemade Saewoo Jang. It’s a true delight that will have everyone asking for seconds!
