Instead of commercial mayonnaise, we’re making our own healthy avocado mayonnaise by blending fresh, raw avocados. This recipe presents a mashed potato salad with avocado mayonnaise that is not only incredibly delicious but also a substantial and satisfying meal option. Basic Ingredients
- 300g potatoes (about 2 medium)
- 200g cucumber (about 1/2)
- 100g onion (about 1/2)

Avocado Mayonnaise Ingredients
- 1 ripe avocado
- 3 hard-boiled eggs
- 4 Tbsp lemon juice
- 3 Tbsp unsweetened soy milk
- 1/3 tsp salt
- A pinch of parsley flakes

Cooking Instructions
Step 1
First, prepare the cucumber. Slice it thinly and uniformly into rounds, about 2mm thick. Thinner slices will result in a better texture.

Add 1 tsp of salt to the sliced cucumber and mix well. Let it sit for about 30 minutes to salt the cucumber. Salting draws out moisture, which helps maintain a crisp texture.

Do not rinse the salted cucumber with water. Squeeze out the excess water firmly by hand. This step prevents the salad from becoming watery.

Slice the onion into strips about 5mm thick. (Approximately 100g)

Mash the potatoes while they are still hot. Mash them until smooth, either with a masher or a fork, ensuring there are no large lumps for a better salad texture.

Add the squeezed cucumber to the mashed potatoes and mix well.
