A Special Treat: Incredibly Tender Beef Sirloin Nigiri Sushi You Can Make at Home
Sushi is one of my absolute favorites! Since preparing fresh raw fish can be a bit challenging at home, I’ve found a delightful alternative using tender beef sirloin. Don’t let ingredient limitations stop you from satisfying your cravings! While it’s easy to make dishes when you have every item perfectly prepared, the real joy comes from improvising and creating deliciousness even when you don’t. This recipe is about transforming everyday ingredients into something truly special.
Sushi Ingredients- Beef Sirloin 400g
- 1 Onion
- A little Water parsley
- 2 Bowls of Cooked Rice
- A little Wasabi
Beef Marinade- 3 Tbsp Teriyaki Sauce
- 1 Tbsp Water
Pickled Onion- 1 Tbsp Vinegar
- 1 Tbsp Sugar
- A pinch of Salt
Sushi Vinegar (for rice)- 2 Tbsp Vinegar
- 2 Tbsp Sugar
- A little Salt
- 3 Tbsp Teriyaki Sauce
- 1 Tbsp Water
Pickled Onion- 1 Tbsp Vinegar
- 1 Tbsp Sugar
- A pinch of Salt
Sushi Vinegar (for rice)- 2 Tbsp Vinegar
- 2 Tbsp Sugar
- A little Salt
- 2 Tbsp Vinegar

Cooking Instructions
Step 1
Instead of fish, I made sushi using beef sirloin, and it’s incredibly delicious! First, while the rice is still warm, mix in the sushi vinegar ingredients (2 Tbsp vinegar, 2 Tbsp sugar, a little salt). Quickly combine them to ensure the seasoning is evenly distributed throughout the rice, then let it cool slightly before forming the sushi.
Step 2
Shape the rice into bite-sized, oval pieces. Gently spread a small amount of wasabi on each rice ball. Then, top it with the beef sirloin that has been simmered in the teriyaki sauce mixture. Finally, add some thinly sliced pickled onion on top for an extra burst of flavor! The pickled onion really enhances the overall taste.
Step 3
Instead of the usual sprouts or microgreens, I’ve used fresh water parsley leaves for a vibrant garnish. The refreshing aroma of the water parsley complements the rich flavor of the beef, creating a uniquely delightful sushi experience.
Step 4
Slice the tender beef sirloin into convenient pieces. Place these flavorful beef slices over the seasoned rice, and generously top with the crisp and tangy pickled onions. This combination results in a truly delicious beef nigiri sushi. Enjoy every bite!

Every time I make a delicious dish like this, I wish I could share it with my dear friends. How wonderful it would be to have close friends nearby to share good food with, laughing and chatting merrily! That’s the kind of warm moments I often long for.

Enjoying this homemade sushi with a warm bowl of doenjang-jjigae (soybean paste stew) is an unparalleled culinary delight. It’s a dish I could eat every day without getting tired of it, although I admit, I do sometimes miss the traditional fish sushi!

I must have really enjoyed making and eating sushi after such a long time because I ate so much of it! Plates were piling up just like at a conveyor belt sushi restaurant, to the point where I felt a little embarrassed. But I suppose that’s proof of how delicious it was!
