These brownies are from the book ‘Sweets Made with Honey and Nuts’. They use very little flour, making them incredibly tender and melt-in-your-mouth. Ingredients- 80g dark chocolate
- 50g butter
- 2 Tbsp milk
- 30g honey
- 1 Tbsp all-purpose flour (Korean medium-gluten flour)
- 20g almond flour
- 1/4 tsp baking powder
- Pinch of salt
- 1 egg
- Toasted nuts for topping (e.g., walnuts, pecans)
- Chocolate chips (optional, as needed)
Cooking Instructions
Step 1
Begin by melting the dark chocolate, butter, and milk together in a heatproof bowl over a double boiler. Stir occasionally until completely smooth. In a separate bowl, whisk the egg lightly until broken, then add the honey and whisk with a balloon whisk until slightly pale. You don’t need to achieve stiff peaks; just a pale, slightly emulsified mixture is perfect.
Step 2
Now, sift the all-purpose flour, almond flour, baking powder, and salt into the egg and honey mixture. Gently fold these dry ingredients into the wet ingredients using a rubber spatula until just combined. Be careful not to overmix, as this can make the brownies tough. Mix until no dry streaks remain.
Step 3
Pour the melted chocolate, butter, and milk mixture into the batter. Fold everything together gently until you have a smooth, homogenous brownie batter. Pour the batter into your prepared baking pan (an 8×8 inch square pan is common, but adjust to your pan size). Decorate the top with your chosen toasted nuts and optional chocolate chips. Bake in a preheated oven at 170°C (340°F) for about 17-18 minutes. Baking time may vary depending on your oven and pan size.
