  • 1 Tbsp all-purpose flour (Korean medium-gluten flour)
  • 20g almond flour
  • 1/4 tsp baking powder
  • Pinch of salt
  • 1 egg
  • Toasted nuts for topping (e.g., walnuts, pecans)
  • Chocolate chips (optional, as needed)

Cooking Instructions

Begin by melting the dark chocolate, butter, and milk together in a heatproof bowl over a double boiler. Stir occasionally until completely smooth. In a separate bowl, whisk the egg lightly until broken, then add the honey and whisk with a balloon whisk until slightly pale. You don’t need to achieve stiff peaks; just a pale, slightly emulsified mixture is perfect.

Now, sift the all-purpose flour, almond flour, baking powder, and salt into the egg and honey mixture. Gently fold these dry ingredients into the wet ingredients using a rubber spatula until just combined. Be careful not to overmix, as this can make the brownies tough.
