Melt-in-Your-Mouth LA Galbi Jjim (Braised Short Ribs)

Ingredients
- LA Galbi (short ribs) 1.1kg
- King oyster mushroom 1
- Onion 1.5
- Carrot 1/2
- Ginkgo nuts 10
- Peeled chestnuts 3
- Green onion 1 stalk
- Dried chili peppers 2
- Sesame oil 1/2 Tbsp
- Toasted sesame seeds a little
Seasoning
- Soy sauce 6 Tbsp
- Oligosaccharide 5 Tbsp
- Sugar 1 Tbsp
- Black pepper 1/2 Tbsp
- Minced garlic 1.5 Tbsp
- Water 500ml

Cooking Instructions
Step 1
Soak the LA Galbi in cold water for 2 hours and 30 minutes to remove excess blood. This step is crucial for a clean taste without any gamey odor.
Step 2
After soaking, trim off any excess fat from the ribs. Then, cut the ribs into bite-sized pieces, about 5-7 cm long, for easy eating.
Step 3
Prepare the vegetables. Chop the onion coarsely. Cut the king oyster mushroom and carrot into pieces similar in size to the galbi. Slice the green onion in half lengthwise and then cut into 5cm lengths.
Step 4
In a deep pot, combine the drained LA Galbi, coarsely chopped onion, and dried chili peppers. Pour in the prepared seasoning mixture (soy sauce, oligosaccharide, sugar, black pepper, minced garlic, and water). Stir well to coat the ribs. Cover the pot with a lid, bring to a boil over medium heat for 25 minutes, then reduce the heat to low and simmer for 50 minutes.
Step 5
Once the galbi is becoming tender, add the king oyster mushrooms, carrots, chestnuts, and ginkgo nuts. Cover the pot again and continue to simmer over medium-high heat for about 10 minutes, allowing the vegetables to cook and the sauce to thicken slightly. If you prefer a saltier flavor, you can add a little more soy sauce at this stage.
Step 6
About 2 minutes before the dish is finished cooking, add the chopped green onions and drizzle in the sesame oil. This adds a fresh aroma and nutty flavor.
Step 7
Finally, transfer the LA Galbi Jjim to a serving dish and sprinkle with toasted sesame seeds for garnish. Enjoy this flavorful and tender dish with a side of warm rice!
