Ingredients
  • Penne pasta, about 35 pieces (approx. 50g dried)
  • 2 Mentaiko (spicy cod roe)
  • 2 Tbsp Mayonnaise (approx. 20g)
  • 1/2 Tbsp Oligosaccharide syrup (approx. 6g)
  • 1/2 cup Shredded Mozzarella cheese (approx. 50g)
  • A pinch of dried Parsley flakes (for garnish)

Cooking Instructions

Step 1

First, prepare the penne pasta. Bring a pot of water to a boil and add about 35 pieces of penne pasta (approximately 50g when dry). Cook for about 8 minutes, or slightly less than the package instructions. It’s best to cook them al dente so they are easier to skewer without breaking.

Step 2

Next, prepare the mentaiko. Use the back of a knife or a spoon to gently scrape the membrane from the mentaiko, separating the roe from the skin. Handle it carefully to avoid bursting the roe.

Step 3

In a small bowl, combine the extracted mentaiko roe, 2 tablespoons of mayonnaise (approx. 20g), and 1/2 tablespoon of oligosaccharide syrup (approx. 6g). Mix well to create the delicious mentaiko mayo sauce. You can substitute honey or sugar for the oligosaccharide if preferred.

Step 4

Thread the cooked penne pasta onto skewers. Gently insert them one by one, arranging them nicely on each skewer.

Step 5

Generously spoon the prepared mentaiko mayo sauce over the penne pasta on each skewer. Ensure the sauce gets into the pasta crevices.

Step 6

Top the mentaiko mayo with about 1/2 cup of shredded mozzarella cheese (approx. 50g), distributing it evenly. Finish with a sprinkle of dried parsley flakes for a visually appealing touch.

Step 7

Preheat your oven or air fryer to 180°C (350°F). Place the assembled mentaiko cheese skewers inside and bake for about 5 to 7 minutes, or until the cheese is melted and bubbly and the pasta is lightly golden. Serve immediately while hot for the best flavor experience!
