Microwave Cheesy Egg Rice
Quick & Easy Microwave Cheesy Egg Rice Recipe (No Stove Needed)
Super simple yet delicious! Enjoy this incredibly easy microwave cheesy egg rice.
Main Ingredients- 2 large eggs
- 1/2 bowl of cooked rice (warm)
- 2 Tbsp chopped green onions
- 1 handful of diced ham (approx. 30g)
- 1/2 Tbsp soy sauce
- 2 pinches of salt
- A pinch of black pepper
Cooking Instructions
Step 1
First, finely chop the green onions and ham. This adds great texture and flavor. Chop the green onions into small pieces and dice the ham into bite-sized cubes, especially if serving to children.
Step 2
Get a microwave-safe bowl with some depth. Crack the 2 eggs into the bowl. Add the chopped ham and green onions. Sprinkle in 2 pinches of salt and a pinch of black pepper to enhance the flavors and reduce any eggy smell. Gently whisk the eggs with a fork or chopsticks until the yolks and whites are combined.
Step 3
Add the 1/2 bowl of warm cooked rice to the egg mixture. Gently break up any clumps of rice and mix it in, ensuring the rice grains are coated with the egg mixture. This step is key for a creamy texture. Now, drizzle in the 1/2 Tbsp of soy sauce over the rice. Mix everything together again lightly so the soy sauce is evenly distributed.
Step 4
Cover the bowl tightly with plastic wrap. Carefully poke 2-3 small holes in the plastic wrap with a fork or toothpick to allow steam to escape during cooking. Microwave on high for about 3 minutes. The rice should be heated through, and the egg should start to set. (Cooking time may vary depending on your microwave’s wattage.)
Step 5
Carefully remove the bowl from the microwave. The egg might still be a little runny in the center, so gently stir everything together with a spoon to combine the cooked and uncooked parts. Once mixed, sprinkle 2 Tbsp of shredded mozzarella cheese over the top, followed by 1 slice of cheddar cheese (or more shredded cheddar). Return the bowl to the microwave and cook for another 3 minutes, or until the cheese is melted and bubbly. Your delicious cheesy egg rice is ready! Serve immediately while it’s hot and the cheese is wonderfully stretchy.
