Ingredients- 2 fresh eggs
- 2 Tbsp finely chopped onion
- 2 Tbsp finely chopped carrot
- 2 Tbsp chopped green onion (scallion)
- 1/2 slice cheddar cheese, torn into small pieces
- 120ml milk
Seasoning- 1 Tbsp salted shrimp, finely minced (or fish sauce)
- 1 Tbsp cooking wine (mirin or similar)
- Salt to taste
- 1 Tbsp salted shrimp, finely minced (or fish sauce)
- 1 Tbsp cooking wine (mirin or similar)
- Salt to taste
Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor and texture to your steamed egg. Finely chop the onion and green onions, and dice the carrot into small pieces. The smaller the vegetable pieces, the better they will blend into the egg mixture.
Step 2
In a bowl, crack the 2 fresh eggs. Pour in 120ml of milk. Use a whisk to beat the eggs and milk together until well combined and no streaks remain. Ensure a smooth consistency.
Step 3
This step helps eliminate any eggy smell and enhances the savory flavor. Add 1 Tbsp of finely minced salted shrimp (or fish sauce) and 1 Tbsp of cooking wine to the egg mixture. Stir well to incorporate. If you don’t have salted shrimp, fish sauce is a good alternative. You can also use water or kelp broth instead of milk for a different flavor profile.
Step 4
Now, your egg mixture and chopped vegetables are all ready. It looks like a beautiful collection of colorful gems, doesn’t it?
Step 5
Lightly grease the inside of your microwave-safe bowl with a little sesame oil. This will help prevent the steamed egg from sticking and ensure it releases easily after cooking. Carefully pour the prepared egg mixture into the greased bowl.
Step 6
Once the egg mixture is in the bowl, artfully arrange the chopped onion, green onion, and carrot on top. Gently spread the vegetables over the surface of the egg mixture for an appealing look.
Step 7
Cover the top of the bowl tightly with plastic wrap. Ensure it’s sealed well to prevent steam from escaping too quickly. Then, use a toothpick or a fork to poke a few small holes in the plastic wrap. This allows excess steam to escape, preventing the steamed egg from becoming watery.
Step 8
Place the prepared bowl into the microwave. Start by heating it for 2 minutes. The egg mixture will begin to set slightly.
Step 9
After 2 minutes, carefully remove the bowl from the microwave. You can gently check the doneness with a chopstick. Then, tear the 1/2 slice of cheddar cheese into pieces and scatter them evenly over the partially cooked steamed egg. Re-cover the bowl with the plastic wrap and microwave for an additional 3 minutes. A total of 5 minutes of cooking time will result in a perfectly done, delicious steamed egg!
Step 10
On a hot summer day, you don’t need to toil over a hot stove. With this microwave recipe, you can easily and quickly make a wonderful cheesy steamed egg. The milk and cheese make it incredibly soft and savory. Give it a try – you’ll love it!
