Main Ingredients
- 2 eggplants (choose plump and firm ones)
Seasoning
- 1/2 Tbsp Guk-ganjang (Korean soup soy sauce)
- 1/2 Tbsp sesame oil
- 1/2 Tbsp minced garlic
- 1/2 Tbsp sesame seeds
- A pinch of salt (adjust to taste)

Cooking Instructions
Step 1
First, prepare two fresh, plump eggplants. Wash them thoroughly under running water.
Step 2
Trim the ends of the eggplants and cut them into bite-sized pieces, about 5-7 cm in length. Place all the cut eggplant into a microwave-safe bowl.
Step 3
Microwave on high for 3 minutes and 30 seconds. The eggplant might still be a bit firm, so flip the pieces over and microwave for another 3 minutes. Microwaving for a total of about 6 minutes and 30 seconds should result in tender and moist eggplant.
Step 4
Once cooked, carefully drain any excess liquid by placing the eggplant in a sieve and letting it cool slightly. Even when steamed in a steamer, eggplant releases water, and microwaving is no different. Draining this excess liquid prevents the side dish from becoming watery and ensures a better flavor.
Step 5
Transfer the slightly cooled eggplant to a mixing bowl. Add all the prepared seasonings: Guk-ganjang, sesame oil, minced garlic, and sesame seeds. It’s best to start with less salt and adjust with additional salt if needed.
Step 6
Gently mix everything together with your hands, ensuring the seasoning coats the eggplant evenly. Be careful not to mash the eggplant as you mix. Your delicious microwave eggplant side dish is ready!
