Microwave Kabocha Squash Egg Gratin (feat. Bacon)
Easy & Delicious Kabocha Squash Egg Gratin Recipe!
I’ve been seeing so many mouth-watering videos of Kabocha Squash Egg Gratin lately that I couldn’t resist buying a whole box of kabocha! And let me tell you, it was incredibly delicious (super tasty!). I decided to add some bacon to mine for extra flavor. This is a super quick breakfast dish you can make using your microwave, perfect for kids’ snacks too. Shall we make some Kabocha Squash Egg Gratin?
Ingredients- 1 Kabocha squash (medium size)
- 5 Tbsp Mozzarella cheese
- 1 strip Bacon
- 1 Egg
- Pinch of salt
Cooking Instructions
Step 1
First, prepare all the ingredients for the dish: 1 strip of bacon, 1 egg, 5 tablespoons of mozzarella cheese (measured with a regular soup spoon), and 1 kabocha squash that’s a good size for individual serving.
Step 2
To thoroughly clean the kabocha squash’s skin, sprinkle a little baking soda over it.
Step 3
Wash the kabocha squash sprinkled with baking soda under running water to remove any pesticides or dirt.
Step 4
Place the cleaned kabocha squash upside down (stem side up) in the microwave and heat for about 1 minute. This step makes it much easier to cut the top and scoop out the insides later.
Step 5
Once removed from the microwave and slightly cooled, use a knife to carefully cut off the top portion, creating a lid. Be careful not to cut too deep into the squash.
Step 6
After removing the lid, gently score the inside flesh with a knife to make scooping out the seeds and pulp easier. (Just a light scoring so you don’t damage the flesh too much.)
Step 7
Using a spoon, carefully scoop out the seeds and soft inner pulp from the kabocha squash. Make sure to remove them cleanly to create space for the egg filling.

Crack the egg carefully into the hollowed-out kabocha squash. Lightly break the yolk with a fork, and add a pinch of salt to season and balance the flavors.
Step 9
Place the lid back on the kabocha squash. Gently press it down to ensure it’s closed securely. Then, microwave for about 3 more minutes to cook the egg.
Step 10
Once taken out of the microwave, arrange the chopped bacon evenly over the warm kabocha squash. The savory and crispy bacon will complement the sweetness of the squash.

Now, generously sprinkle the mozzarella cheese over everything. As the cheese melts, it will create a wonderful harmony with the kabocha, egg, and bacon.

Finally, place the kabocha squash in an air fryer and cook at 180°C (356°F) for 5 to 8 minutes, or until the cheese is golden and bubbly and the bacon is crispy. (Adjust the time based on your air fryer’s performance.) Your delicious Kabocha Squash Egg Gratin is ready! Enjoy it while it’s warm!
