First, prepare the mold for your roll cake. Take a sheet of thick drawing paper (8-cut size) and fold it into a rectangular shape measuring approximately 20cm wide, 20cm long, and 3.5cm high. Line the inside of this mold with parchment paper to prevent the batter from sticking. This method allows you to create a roll cake mold without needing a traditional baking pan.

In a clean mixing bowl, place the egg whites. Gradually add Sugar A (30g) in 2-3 additions while whipping until stiff peaks form. It’s crucial to whip until the meringue is firm enough that it holds its shape when the bowl is tilted.

In a separate bowl, add the egg yolks and Sugar B (10g). Whip until the mixture turns a pale ivory color and becomes slightly thick. Then, gently fold the stiff meringue from step 1 into the yolk mixture. Place the rolled cake in the refrigerator for at least 30 minutes to allow the cream to set, which will make it easier to slice.
