Ingredients

  • 1 Tbsp mirin (rice wine)
  • 1 Tbsp fermented anchovy sauce (or soy sauce)
  • 1/2 Tbsp sesame oil
  • A small amount of green onion, finely chopped
  • Water (equal amount to the eggs)

Start by preparing 2 fresh large eggs. If the eggshells are dirty, wash them thoroughly. Crack the eggs into a large bowl. Gently whisk the eggs with a fork or whisk until the yolks and whites are well combined. Avoid over-whisking; aim to break the chalazae (the white cords) for a smoother texture.

Once the eggs are well beaten, it’s time to season and eliminate any eggy smell. Add 1 tablespoon of mirin (rice wine). Mirin is excellent for removing the gamey odor of eggs and contributes to a softer, more delicate texture in the final dish.

Next, we’ll add depth of flavor. I’m using 1 tablespoon of fermented anchovy sauce for seasoning. While tuna extract is often used in soups, fermented anchovy sauce adds a richer umami flavor that works wonderfully in side dishes like this steamed egg. If you don’t have fermented anchovy sauce, soy sauce can be a good substitute.

Now, let’s add some aromatic freshness and color. Finely chop the green parts of a fresh scallion. Add the chopped scallions to the egg mixture. Stir everything together gently with a spatula or spoon – the beaten eggs, mirin, and anchovy sauce. Make sure all ingredients are evenly distributed without any clumps.

The secret to a moist and tender steamed egg lies in the water content. Add clean water in an amount equal to the volume of your beaten egg mixture. Using more water will result in a moister and silkier steamed egg. Give it another gentle stir to combine everything well.

Once the cooking is complete, do not remove it immediately. Let it sit in the microwave for 1 more minute to allow residual heat to finish cooking. This ensures the egg is evenly cooked and super tender.
