- 3 Tbsp soy sauce
- 1 Tbsp plum extract
- 1 Tbsp oligosaccharide
- 1 Tbsp sesame oil
- A little green onion (finely chopped)
- Sesame seeds
Cooking Instructions
Step 1
First, prepare about 15 chili peppers. You can use any type you prefer, such as Shishito peppers, regular green chilies, or spicy Cheongyang chilies. I chose 15 Cheongyang chilies because I enjoy a bit of heat. Even with spicy chilies, the heat mellows out during cooking, so they aren’t as overwhelmingly spicy as you might expect. Remove the stems from the chilies and wash them thoroughly. Do not dry them completely; leave a little moisture on them.
Step 2
Place the slightly moist chili peppers into a clean plastic bag (like a ziplock or produce bag). Sprinkle about 2 tablespoons of Korean pancake mix evenly over the peppers.
Step 3
Gently inflate the bag with a little air, then hold the opening securely. Shake the bag well to ensure the pancake mix coats the chilies evenly. The residual moisture from washing helps the mix adhere nicely.
Step 4
Place the coated chili peppers, still in the plastic bag, into the microwave. Microwave on high for 2 minutes. Make sure not to seal the bag completely; leave the opening slightly ajar to allow steam to escape. After 2 minutes, take them out, shake the bag again, and check the texture of the chilies. If they still feel too firm or undercooked, microwave for an additional 1 minute at a time. The total cooking time will vary depending on the size and quantity of your chilies and your microwave’s power, but approximately 3 to 4 minutes should be sufficient. I microwaved mine for 4 minutes as they were quite large and thick.
Step 5
While the chilies are steaming in the microwave, prepare the seasoning sauce. In a bowl, combine 1 tablespoon of chili powder, 3 tablespoons of soy sauce, 1 tablespoon of plum extract, 1 tablespoon of oligosaccharide, and 1 tablespoon of sesame oil. Mix these ingredients well. Finally, add the finely chopped green onions and sesame seeds, and stir everything together until the seasoning sauce is nicely blended.
Step 6
Carefully transfer the steamed chili peppers from the microwave into a wide bowl. Allow them to cool slightly for a few minutes.
Step 7
Once the chilies have cooled down a bit, add the prepared seasoning sauce to the bowl. Gently toss and mix the chilies with the sauce using chopsticks or a spatula, being careful not to break them. Ensure all the chilies are evenly coated with the delicious sauce. Your steamed chili peppers are now ready!
Step 8
Serve the finished steamed chili peppers in a dish. They make a wonderful side dish for rice or a tasty accompaniment to drinks. Enjoy your delicious creation!
