Microwave Steamed Egg: Soft & Silky Custard
Microwave Pudding Chawanmushi: Melt-in-your-mouth Soft and Moist Steamed Egg Dish (Lacto-Ovo)
This microwave steamed egg recipe is so flavorful, you could almost call it a clear egg soup! It’s incredibly soft and moist, perfect for a comforting meal.
Ingredients- 3 large eggs
- 350g warm water
- 2/3 Tbsp salt
- 1 Tbsp finely chopped green onion
- Sesame oil (optional)
Cooking Instructions
Step 1
Crack 3 eggs into a bowl. Add 2/3 Tbsp of salt. Use a fork to vigorously beat the eggs until the yolks and whites are well combined. Try to mix them thoroughly without creating too much foam.
Step 2
Pour 350g (about 1.5 cups) of warm water into the beaten eggs. You can conveniently use the warm water setting on your water dispenser. Gently stir to combine, then skim off any foam from the surface using a spoon or sieve. Removing the foam is key to achieving a silky smooth texture.
Step 3
Stir in 1 Tbsp of finely chopped green onion. Cover the bowl with plastic wrap and poke a few holes in it with a fork. Microwave for 7-8 minutes. Cooking time may vary depending on your microwave’s power, so it’s best to start with 7 minutes.
Step 4
After cooking, gently poke the steamed egg with a fork to check for doneness. If it’s still too soft, microwave for an additional 30 seconds to 1 minute. (I found that an extra minute yielded a perfect pudding-like consistency.) Drizzle with a little sesame oil for extra flavor, if desired.
