Main Ingredients- 2 eggplants
- 1 Korean green chili pepper (cheongyang pepper)
- 1 red chili pepper
- A little bit of green onion
Seasoning- 2 Tbsp soy sauce
- 1/2 Tbsp red pepper flakes (gochugaru)

- 1/2 Tbsp minced garlic

Cooking Instructions
Step 1
First, trim the stem ends off the eggplants. Then, cut them in half lengthwise. Place the eggplant halves in a microwave-safe dish and cover with plastic wrap. Poke a few holes in the plastic wrap with a chopstick to allow steam to escape. Microwave on high for about 4-5 minutes, or until tender. Eggplants contain a lot of moisture, so you don’t need to add any extra water; they will steam beautifully on their own.

After microwaving, carefully remove the dish. The eggplant should be tender and slightly chewy.

Once the eggplant has cooled slightly, gently shred it lengthwise into bite-sized pieces. You can also cut it with a knife or scissors. Gently squeeze out any excess water from the shredded eggplant. This step is important as it prevents the dish from becoming watery later on.
