Main Ingredients
  • 1/2 block Firm Tofu
  • 3 Large Eggs

Cooking Instructions

Step 1

Place the 1/2 block of tofu in a bowl. Using a fork or a mashing tool, mash the tofu until it’s smooth and lump-free. The finer you mash the tofu, the smoother the final texture of your egg custard will be.

Step 2

Wash the zucchini and carrot thoroughly. Finely mince them into small pieces, about 0.3cm in size. Smaller pieces will cook faster and blend better into the custard. (Feel free to add other finely chopped vegetables like peas or corn for extra flavor and nutrients!)

Step 3

Add the minced zucchini and carrot to the bowl with the mashed tofu. Gently mix them together. Ensuring the vegetables are evenly distributed at this stage will help them spread nicely throughout the egg custard.

Step 4

In a separate bowl, crack the 3 large eggs. Add the 1/4 tsp of salt and 2 Tbsp of tuna extract. Whisk the eggs gently until well combined, but try to avoid creating too much foam. (You can substitute soy sauce for tuna extract for a different flavor profile.)

Step 5

Pour the whisked egg mixture over the tofu and vegetable mixture. Gently stir everything together until well combined. Be careful not to overmix; you want the ingredients to be evenly incorporated.

Step 6

Transfer the combined mixture into a microwave-safe bowl. Cover the bowl with plastic wrap, and poke a few small holes in the wrap to allow steam to escape. Microwave on high for approximately 5 minutes. (Cooking times may vary depending on your microwave’s wattage. It’s best to check after 4 minutes and add more time if needed.)

Step 7

Your delicious Tofu and Egg Custard is ready! Carefully remove the hot bowl from the microwave. Enjoy it warm, or let it cool slightly before serving. This is a simple yet satisfying side dish perfect for beginner cooks!
