Creative Ways to Revitalize Leftover Rice into Delicious Kimchi Fried Rice
A perfectly balanced kimchi fried rice that’s savory without being greasy. This recipe is designed for a lighter, more enjoyable flavor, even for children.
Main Ingredients- 2 Eggs
- 1 stalk Green Onion (use mostly the white part)
- 3 leaves Washed Kimchi (Napa cabbage kimchi or aged kimchi)
- A small handful of Oyster Mushrooms (approx. 30g)
- 1/2 Onion
- 1/4 Bell Pepper
- 1.5 bowls of Cooked Rice (cold, approx. 300g)

- 1 Tbsp Sesame Oil

Cooking Instructions
Step 1
To make this kimchi fried rice enjoyable even for children, gently rinse the kimchi under running water to remove excess red chili paste and spice. Squeeze out the water thoroughly, then finely mince it. Finely chop the white part of the green onion. Dice the onion, bell pepper, and oyster mushrooms into small, uniform pieces (about 0.5cm). Cutting all ingredients small ensures a pleasant texture in the fried rice.
Step 2
Lightly oil a heated frying pan, then wipe it with a paper towel to coat the surface evenly. This prevents the eggs from sticking. Pour in the beaten eggs and scramble them using chopsticks until they form soft curds. Set the scrambled eggs aside on a plate.
Step 3
Add a little more vegetable oil to the same pan and sauté the chopped green onions until fragrant. Then, add the minced kimchi and stir-fry until it softens. Next, add the diced onion, bell pepper, and oyster mushrooms, and cook until the vegetables become translucent. Finally, add the cold rice and break up the clumps with a spatula, stir-frying until the kimchi, vegetables, and rice are well combined and heated through.
Step 4
Once the rice is fluffy and lightly fried, stir in 1 Tbsp of minced garlic and 1 Tbsp of sesame oil for added aroma and flavor. Add the prepared scrambled eggs and gently mix them in. Season with salt and pepper to your preference. Finish by generously sprinkling sesame seeds for a nutty flavor and delightful crunch. Your delicious kimchi fried rice is now ready to be served!
