Main Ingredients

  • 1 piece of chicken breast (approx. 100-150g)
  • 1/2 potato (medium-sized)

Seasoning

  • 1/2 Tbsp soy sauce
  • 1/2 Tbsp oligosaccharide
  • A pinch of sesame seeds

Chicken Marinade

  • A pinch of black pepper
  • A little cooking wine (or mirin)

Cooking Instructions

Step 1

To remove any gamey odor from the chicken breast, soak it in fresh milk for about 10 minutes. If milk is unavailable, rice water can also be used. After 10 minutes, remove the chicken breast, rinse it clean, and cut it into bite-sized pieces suitable for your baby. Season the prepared chicken breast with a pinch of black pepper and a little cooking wine (or mirin), then gently mix and marinate.

Peel the potato and cut it into pieces similar in size to the chicken breast. Soak the cut potatoes in cold water to remove excess starch. Removing the starch helps the seasoning penetrate better and results in a softer texture. After draining the starch from the potatoes, pat them dry. Add a little oil to a pan and stir-fry the potatoes until they become slightly translucent.

Once the potatoes start to turn translucent from stir-frying, add just enough water to cover them. Cover the pan with a lid and simmer over medium-low heat. This process helps the potatoes cook through to a tender consistency and absorb the flavors.

When the potatoes are sufficiently cooked and the liquid has reduced slightly, add the marinated chicken breast to the pan and stir-fry together. Gently stir-fry as the chicken cooks and blends with the potato seasoning.

In a small bowl, mix 1/2 Tbsp soy sauce with 1/3 cup of water to create a soy sauce mixture. Pour this mixture into the pot and add 1/2 Tbsp of oligosaccharide for a touch of sweetness. The flavors will concentrate as the dish simmers. If you have pre-soaked glass noodles, add them at this stage. The glass noodles will absorb the sauce and become even more delicious.
