Basic Broth Ingredients- Water 1 Liter

1. Prepare the Broth: Traditionally, Milfeuille Nabe involves boiling the broth separately. For this air fryer version, we’ve simplified the process. In a pot, combine 1 liter of water with 1 Tbsp dried shrimp, 1 Tbsp bonito flakes, and 1 Tbsp dried anchovies. Let it steep at room temperature for about 30 minutes to extract a deep umami flavor. (Tip: It’s convenient to prepare the broth first while you prepare the other ingredients.)

2. Strain the Broth: Once steeped, strain the broth through a fine-mesh sieve to remove all solids, leaving only the clear, flavorful liquid. This ensures a clean and delicious soup base.

3. Assemble the Layers: Baby Napa cabbage (알배추) is preferred for its tenderness and quick cooking time, making it ideal for children. Gently unfold the cabbage leaves. Layer slices of beef and perilla leaves on top. Cut the layered cabbage into approximately 4 equal portions, stacking them neatly.

4. Shape the Nabe: To achieve a compact and visually appealing arrangement, use a small pot or bowl. Place the assembled cabbage bundles upright inside, with the folded part facing inwards. Trim the enoki mushrooms to a suitable size and place them among the cabbage rolls.
