After blanching, gently pat the sausages dry with paper towels. Then, to make them easy for children to hold and eat, insert a toothpick into the end of each sausage. They’ll look like adorable mini lollipops!

In a bowl, combine the pancake mix, milk, and eggs. Whisk until you achieve a smooth batter with no lumps. (Pancake mix typically contains sugar, so no additional sweetener is usually needed.) The batter consistency should be neither too thick nor too thin – just right to coat the sausages evenly. Dip each toothpick-skewered sausage into the batter, ensuring it’s fully coated. Heat about 2 cups of vegetable oil in a deep pan over medium-high heat (around 350-375°F or 170-180°C). Carefully place the battered sausages into the hot oil. Fry for about 2-3 minutes, turning occasionally, until they are golden brown and crispy. Be mindful of the oil temperature; if it’s too low, the corn dogs will absorb too much oil, and if it’s too high, the outside might burn before the inside is cooked.
