First, prepare your Vienna sausages. Briefly blanch them in boiling water for 1-2 minutes. This helps them become plump and enhances their flavor. Gently pat them dry with a paper towel.

Now, let’s make the delicious batter! In a large bowl, combine the all-purpose flour (150g), sugar (40g), baking powder (3g), and salt (1/2 tsp). Whisk or use a fork to ensure all the dry ingredients are thoroughly mixed and free of lumps. This step is key to a smooth batter.

In a separate small bowl, crack the whole egg and add the additional egg yolk. Lightly beat them together with a fork, making sure to break up any tough stringy bits (the chalaza). The extra yolk will make the batter richer and more tender.

Pour the beaten egg mixture and milk (135ml) into the bowl with the dry ingredients. Using a spatula or whisk, gently mix until just combined and no dry flour streaks remain. The batter should be quite thick; a slightly stiff consistency is ideal for coating the sausages without running off. Don’t overmix!

Transfer the batter to a tall, narrow cup or container. This makes it much easier to coat the sausages evenly. Insert a skewer or chopstick into each sausage to hold it, then carefully dip and twist the sausage into the batter, ensuring it’s fully coated. If the batter is too thick, you can add a tiny splash more milk, but aim for a coating that clings well.

Time to fry! Heat enough cooking oil in a pot to about 170-180°C (340-350°F). You can test the oil temperature by dropping a tiny bit of batter in; it should sizzle and float to the surface immediately. Carefully lower the battered sausages into the hot oil. Hold them steady with your skewer for a few seconds until the batter sets slightly, then gently rotate them to ensure even browning. Fry until they are a beautiful golden brown and crispy.
