Mixed Rice with Unexpected Ingredients
A Unique Twist on Rice: ‘Jap-tang-bap’ Inspired by Global Flavors
Hello everyone! Living in Germany, I often draw inspiration from Korea’s diverse rice dishes. I wanted to create something unique using ingredients readily available here, and this ‘Jap-tang-bap’ (mixed rice) was born! While the combination might seem unusual, the taste is surprisingly delicious. Most of these ingredients are easily found not just in Germany, but in many places, including Korea. So, I encourage you to give this recipe a try! It’s a fantastic way to elevate a simple meal.
Ingredients- 6 sun-dried tomatoes
- 40g bacon
- 200g rice (approx. 1 to 1.5 cups)
- 10g dried porcini mushrooms (or shiitake mushrooms)
- 1 handful of peas (frozen or fresh)
- 1/2 lemon
- 15g fresh parsley (about 2 tablespoons chopped)
Cooking Instructions
Step 1
If you’re using dried porcini mushrooms, rehydrate them by soaking in water for about 10 minutes until softened. If using fresh mushrooms, you can skip this step. Once rehydrated, squeeze out any excess water.
Step 2
Slice the bacon into approximately 5mm thick strips. Cut the sun-dried tomatoes into similar-sized strips as well. These will add a wonderful depth of flavor to the rice.
Step 3
Chop the squeezed porcini mushrooms into strips, similar in size to the bacon and tomatoes. This will infuse the rice with their earthy aroma.
Step 4
Rinse the rice as you normally would. In your rice cooker pot, combine the rinsed rice with the sliced bacon, sun-dried tomatoes, porcini mushrooms, and peas. Squeeze the juice of half a lemon over the mixture for a touch of brightness. Add water according to your rice cooker’s instructions for cooking rice. Select the cooking mode and start. Once the rice is cooked, fluff it gently and garnish with the chopped fresh parsley for a beautiful finish. Enjoy your flavorful mixed rice!
