  • 5g instant dry yeast
  • 1 large egg (room temperature)
  • 70g milk (warmed)
  • 65g water (warmed)
  • 50g unsalted butter (room temperature, softened)

After the first fermentation, transfer the dough to a work surface and shape it into a round ball. Cover the dough with plastic wrap or a damp cloth and let it rest for 10-15 minutes for its intermediate fermentation (bench rest). This step helps to release the gases in the dough and makes it more pliable for shaping. After the intermediate fermentation, gently press down the dough to degas it, then use a rolling pin to flatten it into a rectangular shape. Starting from one end, roll up the dough tightly. Ensure you roll it evenly and without gaps to achieve a good texture.

Pinch the seam of the rolled dough firmly to seal it, then place it seam-side down into your loaf pan. Now, it’s time for the second fermentation. Let the dough rise in a warm place for about 40-60 minutes, or until it has risen to about 80-90% of the height of the pan. Once the second fermentation is complete, make a light score or cut down the center of the dough. For an extra touch of flavor, you can pipe some additional butter (not included in the recipe’s ingredient list) over the scored area before baking. This step is optional but highly recommended for enhanced butter aroma.

Bake the loaf in a preheated oven at 180°C (350°F) for 20-25 minutes. The bread is ready when the top is golden brown and it sounds hollow when tapped on the bottom.
