Sweet and Tart Blueberry Jelly Roll Cake Recipe
Experience a delightful Jelly Roll Cake featuring a sweet and tangy blueberry jam filling, perfectly complemented by a soft, moist cake sponge. It’s a comforting treat that’s delightful for any occasion, from special celebrations to a simple afternoon tea.
Cake Sheet Ingredients- 100g cake flour
- 130g sugar
- 4 eggs
- 8g corn syrup
- 0.5g baking powder
- 2g salt
- 20g milk
- 1g vanilla extract
Cooking Instructions
Step 1
In a large bowl, gently whisk the eggs until well broken. Add the sugar and salt, then place the bowl over a double boiler (a pot with simmering water). Stir continuously until the sugar has completely dissolved, ensuring no gritty texture remains.
Step 2
Using a whisk or hand mixer, whip the egg mixture. Continue whipping until the batter is pale ivory and forms a ribbon stage – when you lift the whisk, the batter should fall in a thick ribbon that slowly disappears. Sift the cake flour and baking powder over the batter and gently fold them in with a spatula until just combined, being careful not to overmix. Finally, gently fold in the warm milk and vanilla extract until the batter is smooth and glossy.
Step 3
For decorative patterns, take a small portion of the batter and mix it with food coloring. Transfer this colored batter into a piping bag. (This step can be skipped for a plain roll cake).
Step 4
Line an oven tray with parchment paper. Pour the prepared cake batter onto the lined tray and spread it evenly using a scraper to create a flat surface. If you prepared decorative batter, pipe your desired patterns onto the surface. Bake in a preheated oven at 180°C (350°F) for approximately 15 minutes, until lightly golden.
Step 5
While the cake is baking, prepare another sheet of parchment paper or a damp kitchen towel. As soon as the cake is out of the oven, while it’s still hot, carefully invert it onto the prepared parchment paper or damp towel. Gently peel off the parchment paper that was on top. Spread your blueberry jam evenly over the surface of the cake.
Step 6
To make rolling easier, make shallow cuts about 1 cm from the edge of the cake. Using a rolling pin or your hands, carefully and tightly roll the cake from the cut edge. Let it sit for about 1 minute to help set the shape. Gently remove the damp towel, then slice the roll cake into desired portions and enjoy!
