Essential Ingredients

  • 120g Unsalted Butter (to make the cake extra moist)
  • 200g Cake Flour (essential for a fine cake texture)

In the rice cooker inner pot, combine 80g of honey, 50g of sugar, and 120g of butter. Select the ‘reheat’ function and run it for 9 minutes. The ingredients will melt gently, enhancing their flavor.

Once reheating is complete, carefully remove the inner pot from the rice cooker and let it cool at room temperature for about 20 minutes. Cooling inside the rice cooker unit can be slow, making it difficult to manage batter temperature.

While the butter mixture is cooling, sift the 200g of cake flour twice through a fine sieve. This process ensures a smooth, lump-free powder, which will result in a wonderfully tender cake batter.

To the cooled butter, honey, and sugar mixture, crack in 2 fresh eggs and whisk them gently with a whisk until smooth. It’s important to ensure the eggs are fully incorporated without any streaks.

Add the sifted cake flour, 3 teaspoons of baking powder, and 1 teaspoon of salt to the batter. Gently mix with a spatula or whisk until just combined and no dry flour is visible. Due to the high butter content, you won’t need to grease the rice cooker pot; the cake will release cleanly. Make sure to scrape down any settled sugar from the bottom of the pot to ensure even flavor throughout the batter.
