Cooking Instructions
Step 1
This is the first step to making delicious nectarine rice cooker bread. First, prepare the hotcake mix, milk, egg for the batter, and nectarines to add flavor to the bread. If you don’t have nectarines, you can use other seasonal fruits you have in the refrigerator. For measurements, a standard paper cup (200cc) and a tablespoon are convenient.
Step 2
Wash the nectarines thoroughly. Slice them about 0.5cm thick, avoiding the pit. Sprinkle 2 tablespoons of sugar over the sliced nectarines and let them sit for about 30 minutes. This process enhances the sweetness of the nectarines and draws out their moisture, further improving the bread’s flavor. If you have pre-made nectarine syrup, using that will add an even deeper taste.
Step 3
Crack 1 egg into a bowl and add 120cc of milk. Whisk the egg and milk together with a whisk or fork to create an egg-milk mixture. This mixture will contribute to the bread’s moistness.
Step 4
Now, it’s time to make the bread batter. Prepare 250g of hotcake mix. Typically, it comes in a 500g package, so you’ll be using half of it.
Step 5
Add the prepared egg-milk mixture to the hotcake mix and gently stir until well combined, ensuring there are no lumps. It’s important to achieve the right batter consistency – not too thick or too runny. Mixing with a spatula using a cutting motion helps create a smooth batter without clumps.
Step 6
Gently spread about half a tablespoon of butter inside the inner pot of your electric rice cooker to coat it. This prevents the bread from sticking to the pot and adds a rich, buttery flavor. If you prefer not to have a buttery taste or don’t have butter, you can skip this step.
Step 7
Applying butter thoroughly will give the inner pot a glossy sheen, resulting in a more appetizing appearance once the bread is baked.
Step 8
Arrange the nectarine slices, which have been lightly candied, at the bottom of the rice cooker’s inner pot. This way, the beautiful fruit slices will be visible on the top surface of the bread.
Step 9
Carefully pour the prepared batter over the nectarines.
Step 10
Using a spoon or spatula, gently spread the batter evenly within the rice cooker pot. Making the surface flat will help the bread cook evenly.
Step 11
Finally, artfully arrange the remaining nectarine slices on top of the batter. For added texture and nutrition, you can sprinkle some chopped nuts (like walnuts or almonds) in the center, if desired.
Step 12
Select the ‘Steaming’ or ‘Nutrition Steam’ function on your electric rice cooker and set the time for 30 minutes. Please note that the function name and cooking time may vary slightly depending on your rice cooker model, so refer to your user manual. Alternatively, you can use the regular ‘Cook’ function, similar to cooking rice.
Step 13
After 30 minutes, open the rice cooker lid to reveal your beautifully baked nectarine bread! The delightful aroma of freshly baked bread will fill your kitchen.
Step 14
To remove the finished bread, carefully invert the rice cooker pot onto a serving plate. The bread should release cleanly from the pot.
Step 15
While delicious as is, here’s a tip to make it even more appealing, especially for children. Grind 1 tablespoon of sugar in a blender to make powdered sugar and sprinkle it over the bread for a lovely finish and extra sweetness. Tip: If you only grind sugar, it might dissolve too quickly. For a more stable powdered sugar effect, mix a little cornstarch with the sugar before grinding; it won’t dissolve as easily and will maintain its visual appeal longer.
Step 16
Slice the warm and moist nectarine bread into bite-sized pieces and enjoy it with a chilled, homemade fruit tea. Even children who are picky about eating fruit will enjoy this bread, as it’s made in a way that’s appealing and less intimidating. Experience the joy of home baking!
