Essential Ingredients- 2 medium-sized steamed sweet potatoes
- 2 eggs
- 3 Tbsp sugar (adjust to taste)
- A little canola oil (for greasing the mold)
Optional Ingredients (For Extra Flavor!)- A handful of nuts (walnuts, almonds, etc.)
- A handful of dried cranberries
- A handful of nuts (walnuts, almonds, etc.)
- A handful of dried cranberries
Cooking Instructions
Step 1
First, prepare 2 steamed sweet potatoes. Using a fork or a masher, mash the steamed sweet potatoes until they are smooth and lump-free. Mashing them while they are still warm will make the process much easier.
Step 2
Next, separate the 2 eggs into yolks and whites. Add the 2 egg yolks to the mashed sweet potatoes and mix well. The egg yolks will make the sweet potato batter even more moist and tender.
Step 3
In a clean bowl, add the egg whites. Using a hand mixer or a whisk, whip the egg whites. Gradually add the 3 Tbsp of sugar in three additions, whipping until stiff peaks form. The meringue should stand up firmly when you lift the whisk.
Step 4
Gently fold the prepared meringue into the sweet potato mixture in 2-3 additions, being careful not to deflate the air bubbles. Use a spatula to lift from the bottom and fold over, mixing gently. If you are adding optional ingredients like nuts or dried cranberries, mix them in now. They will add a delightful crunch and a touch of tartness.
Step 5
Grease a microwave-safe container thoroughly with canola oil. Proper greasing will prevent the bread from sticking and ensure easy removal. Pour the prepared sweet potato batter into the container and spread it evenly.
Step 6
Cover the container with plastic wrap, then poke a few small holes in the wrap with a fork. Microwave for 7-8 minutes, and your delicious sweet potato bread is ready! Cooking time may vary depending on your microwave’s wattage, so adjust as needed. You can check for doneness by inserting a skewer; if it comes out clean, the bread is done.
