Among these, I’m sharing the ‘Moist and Tender Tofu Curry Rice,’ a dish my kids absolutely adore. Instead of beef or pork, adding plenty of soft tofu creates a fantastic harmony between curry and tofu that stimulates the appetite and provides a sense of fullness. I started putting tofu in curry after seeing a celebrity do it on TV a long time ago, and since then, we always have it with tofu at home.   • 1/3 zucchini
  • 1/4 yellow bell pepper
  • 1/4 red bell pepper
  • 1 small carrot
  • Plenty of olive oil
  • 500ml water

  • Store-bought curry powder (choose your favorite flavor)

First, let’s wash the vegetables thoroughly. For bell peppers and zucchini, sprinkle them with baking soda and vinegar, then add enough water to cover them and let them soak for about 5-10 minutes. After soaking, rinse them under running water while gently rubbing to ensure they are clean.

Soak the tofu briefly in purified water to remove any chill. This helps prevent the tofu from breaking apart too much during cooking and maintains its tender texture.

Dice all the prepared ingredients (potatoes, onion, zucchini, bell peppers, carrot) into bite-sized cubes. Cutting the vegetables to a uniform size ensures they cook at a similar rate and look appealing.

Heat a deep pot or a wok over low heat, then add a generous amount of olive oil. Olive oil adds flavor to the vegetables as they sauté and prevents them from sticking to the pan.
