When dining alone with the children and without my husband, I often opt for a one-dish meal instead of preparing multiple side dishes! Among these, I’m sharing the ‘Moist and Tender Tofu Curry Rice,’ a dish my kids absolutely adore. Instead of beef or pork, adding plenty of soft tofu creates a fantastic harmony between curry and tofu that stimulates the appetite and provides a sense of fullness. I started putting tofu in curry after seeing a celebrity do it on TV a long time ago, and since then, we always have it with tofu at home. This healthy and delicious meal, sure to capture the taste buds of children and adults alike, is ready to be made right now!
Main Ingredients- 1 block firm tofu
- 2 medium potatoes
- 1 medium onion
- 1/3 zucchini
- 1/4 yellow bell pepper
- 1/4 red bell pepper
- 1 small carrot
- Plenty of olive oil
- 500ml water
Curry Sauce- Store-bought curry powder (choose your favorite flavor)

Cooking Instructions
Step 1
First, let’s wash the vegetables thoroughly. For bell peppers and zucchini, sprinkle them with baking soda and vinegar, then add enough water to cover them and let them soak for about 5-10 minutes. After soaking, rinse them under running water while gently rubbing to ensure they are clean.
Step 2
Soak the tofu briefly in purified water to remove any chill. This helps prevent the tofu from breaking apart too much during cooking and maintains its tender texture.
Step 3
All ingredients are now prepared. We have completed the preparation for making delicious curry with fresh vegetables and tender tofu.

Dice all the prepared ingredients (potatoes, onion, zucchini, bell peppers, carrot) into bite-sized cubes. Cutting the vegetables to a uniform size ensures they cook at a similar rate and look appealing.

Heat a deep pot or a wok over low heat, then add a generous amount of olive oil. Olive oil adds flavor to the vegetables as they sauté and prevents them from sticking to the pan.

Add all the diced vegetables to the pan and stir-fry them over medium-low heat until they become slightly softened and fragrant. Sautéing the vegetables thoroughly to bring out their natural sweetness is a crucial step for enhancing the curry’s flavor.

Once the vegetables are softened and have released some of their moisture, pour in 500ml of water and bring it to a boil over high heat.

When the water comes to a rolling boil, reduce the heat to medium-low. Sift the store-bought curry powder evenly over the surface. Stir continuously with a whisk or spatula to ensure the curry powder dissolves completely without any lumps. You can adjust the consistency of the curry by adding more or less water to your preference.
Step 9
The most important tip for making tofu curry rice is to add the tofu at the very end! If you add the tofu too early and let it cook for a long time, it will break apart and lose its shape. Therefore, it’s best to add the tofu when the curry is almost finished.
Step 10
