Addictive Moist Bibim Guksu with a Flavorful Sauce
Hello everyone! Today, I’m sharing a recipe for Bibim Guksu (Korean spicy mixed noodles) that’s exceptionally moist thanks to its delicious sauce. For an even more enhanced flavor, I recommend letting the sauce marinate for a day before serving. It truly deepens the taste!
Ingredients- 1.5 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 1 Tbsp Maesilcheong (Plum Extract)
- 1 Tbsp Vinegar
- 150ml Pear Juice (like ‘Naked Juice’ or similar)
- 0.5 Tbsp Minced Garlic
- 100g Somyeon (thin wheat noodles)
Cooking Instructions
Step 1
Let’s start by making the heart of our Bibim Guksu: the sauce! In a bowl, combine 1.5 tablespoons of gochugaru, 2 tablespoons of gochujang, 1 tablespoon of soy sauce, 1 tablespoon of sugar, 1 tablespoon of maesilcheong, and 1 tablespoon of vinegar. Pour in 150ml of pear juice and add 0.5 tablespoon of minced garlic. Stir everything together until well combined. Tip: For an even richer flavor, let this sauce rest in the refrigerator for about a day. This allows the flavors to meld beautifully, creating a deeper, more complex taste. Preparing it in advance also makes a quick and delicious meal possible!
Step 2
Now, it’s time to cook the noodles. Bring a generous pot of water to a rolling boil. Add a pinch of salt (about 1/2 teaspoon) to the boiling water. Adding salt helps the noodles become chewier and subtly seasons them. Add 100g of somyeon and cook according to package directions, or for about 3-4 minutes, until al dente. It’s a good idea to gently stir the noodles occasionally to prevent them from sticking together.
Step 3
To achieve that perfect chewy texture, rinse the cooked somyeon immediately under cold running water. This step removes excess starch, which contributes to the noodles’ firm bite, and also cools them down so the sauce adheres better.
Step 4
After rinsing, drain the noodles thoroughly in a colander. It’s crucial to remove as much water as possible, as excess moisture can dilute the sauce. You can gently squeeze out the water by hand or pat them dry with a paper towel. Properly drained noodles will allow the sauce to cling to them beautifully.
Step 5
Place the well-drained somyeon in a large mixing bowl. Generously spoon the prepared and marinated sauce over the noodles. Now, using your hands (it’s the best way!), gently toss and mix the noodles with the sauce until every strand is evenly coated. Your delicious and moist Bibim Guksu is now ready to be enjoyed! Tip: For a more complete and satisfying meal, consider adding toppings like shredded lettuce, cucumber strips, kimchi, or a hard-boiled egg.
