Muffin Batter Ingredients- Cake flour 123g
- Strawberry jam 125g
- Granulated sugar 35g
- Melted unsalted butter 15g
- White chocolate 43g
- Milk 40g
- Baking powder 2g
- 1 large egg (room temperature)
Cooking Instructions
Step 1
First, crack one large egg into a bowl and lightly whisk it. Then, add the granulated sugar and mix until the sugar dissolves. Whisking gently with a balloon whisk will yield a smoother batter.

Pour in the milk and whisk again until it’s evenly combined with the egg and sugar mixture. This step ensures all liquid ingredients are smoothly incorporated.

Finely chop the white chocolate. Melt it either by double-boiling (bain-marie) or in the microwave in short intervals (e.g., 30 seconds at a time, stirring in between). Add the melted white chocolate to the batter and quickly mix until smooth, ensuring no lumps remain. It’s important to mix while the chocolate is still warm.

Add the melted unsalted butter to the batter and mix gently until smoothly combined, again making sure there are no lumps. The butter will enhance the muffin’s flavor and moisture.

Sift the cake flour and baking powder over the batter. Once added, switch from a whisk to a spatula and use a cutting motion to mix. Gently fold the dry ingredients into the wet ingredients just until no dry flour streaks are visible. Overmixing can lead to tough muffins, so be gentle!
