Main Ingredients- 4 chicken drumettes

Cooking Instructions
Step 1
First, it’s crucial to remove any gamey smell from the chicken drumettes. Soak the chicken drumettes in 1 cup of milk for about 30 minutes. (This step was missing in the photo, but it’s the secret to eliminating odors!) After soaking, pat the chicken dry with paper towels. Then, toss them with 2 Tbsp of cooking wine, a pinch of salt, and a pinch of pepper. Let them marinate for about 20 minutes to season.
Step 2
Now it’s time to coat the chicken drumettes for frying. Instead of using regular frying mix or cornstarch, using rice flour results in a crispier and cleaner taste. Coat the marinated chicken drumettes evenly with about 4 Tbsp of rice flour. Ensure a thorough coating so the batter doesn’t peel off during frying.
Step 3
Heat your frying oil to around 170°C (340°F). Carefully add the flour-coated chicken drumettes and fry them until golden brown (about 7-8 minutes). Remove the chicken and let excess oil drip off. For an extra crispy texture, increase the oil temperature slightly to 180°C (360°F) and give them a quick second fry for a crispy exterior and juicy interior.
Step 4
In a wide pan, combine all the soy glaze ingredients: 5 Tbsp water, 1 tsp vinegar, 6 Tbsp soy sauce, 1 Tbsp corn syrup or honey, 1 tsp minced garlic, and a pinch of black pepper. Bring to a simmer over medium heat. Once the sauce begins to boil, reduce the heat to low and let it simmer gently until it thickens slightly, creating a glaze. Taste and adjust the soy sauce or sweetener to your preference, ensuring it’s not too salty.
Step 5
Finally, add the double-fried, crispy chicken drumettes to the prepared soy glaze. Toss them over low heat until they are evenly coated and glossy. Serve immediately while hot for the best experience of crispy outside and tender inside!
