Main Ingredients- Pork neck 150g
- Cooking sake (Cheongju) 1 Tbsp
- Mirin 1/2 Tbsp
- Black pepper, a pinch
- Salt, a pinch
- Blanched broccoli 1 cup
- Onion 1/2
- Garlic 3 cloves
- Green onion, a portion
- Vegetable oil 1 Tbsp
- Cooked rice 1 serving (approx. 200g)
Cooking Instructions
Step 1
Dice the vegetables into bite-sized pieces. It’s recommended to blanch the broccoli beforehand for a more tender texture and enhanced nutrients. Slice or mince the garlic and thinly slice the green onion.
Step 2
Cut the pork neck into roughly 1.5cm cubes. Rinse the pork neck briefly in 1 Tbsp of cooking sake to effectively remove any porky odor. Drain any excess water, then toss with salt, pepper, and 1/2 Tbsp of mirin. Let it marinate for a few minutes.
Step 3
Heat a wok or deep skillet over medium heat and add 1 Tbsp of vegetable oil. Add the sliced green onion and garlic, stirring until fragrant. Gently sautéing to infuse the oil with their aromas is key.
Step 4
Once the green onion and garlic are fragrant, add the diced onion and stir-fry until translucent. When the onion is softened and transparent, add the blanched broccoli and the marinated pork neck. Increase the heat to high and stir-fry briskly to cook the pork through and combine everything evenly.
Step 5
Once all ingredients are well-cooked, add 1 serving of cooked rice to the pan. Use a spatula to break up any clumps and stir-fry the rice with the other ingredients. When the rice is heated through, sprinkle in 1 Tbsp of curry powder (mom’s secret!). Stir-fry thoroughly to ensure the curry powder evenly coats all the ingredients. Continue to cook for about another minute to fully release the curry aroma.
Step 6
Transfer the finished curry fried rice to a serving plate. Top with a fried egg (preferably sunny-side up) and a handful of fresh sprouts for added color and texture. Drizzle with steak sauce or a touch of balsamic glaze, if desired, for an extra layer of flavor. Enjoy your delicious meal!
