Cooking Instructions
Step 1
Prepare your fresh burger toppings! Wash lettuce, chicory, and romaine thoroughly and pat them dry. If you have bell peppers, thinly slice them for extra color and crunch. Store-bought burger buns are a convenient choice for this recipe.

To make the delicious patties, place the ground pork in a bowl. Season with a pinch of salt, pepper, and 1 Tbsp of mirin. Gently mix and let it marinate for about 10 minutes to allow the flavors to meld. Finely mince the potato and onion. Chop some scallions as well. Add the marinated pork, minced vegetables, and 1 cup of breadcrumbs to the bowl. Knead the mixture thoroughly with your hands until it becomes elastic and well-combined. This step is key to achieving a tender and flavorful patty with a satisfying chew.
Step 3
Divide the meat mixture into portions of about 70g each. Shape them into round, flat patties that fit your burger buns. Making them not too thick ensures they cook evenly through to the center. These patty sizes are perfect for a substantial burger.

To achieve that perfect glossy consistency, mix 1 Tbsp of cornstarch with a little water to create a slurry, then stir it into the sauce until it thickens. This homemade sauce has a rich, deep flavor, reminiscent of store-bought bulgogi sauce but with a homemade touch.

Lightly toast the cut sides of your burger buns in a dry skillet or toaster until warm. Spread a generous layer of fresh lettuce on the bottom bun. Place the perfectly cooked patty on top of the lettuce. Now, pour the homemade Bulgogi sauce generously over the patty and bun. Using a squeeze bottle or spoon, ensure the sauce is well-distributed for maximum flavor.
