The Ultimate Homemade Scallion Kimchi Recipe: How to Make Fresh and Delicious Pa Kimchi at Home
I can never forget the taste of the scallion kimchi my mom used to make, so I decided to try making it myself with green onions freshly harvested from my rooftop garden. Pa kimchi made with just-picked scallions tastes incomparably better and fresher than store-bought ones. Follow this recipe, and anyone can make delicious scallion kimchi!
Scallion Kimchi Main Ingredients- 300g fresh green onions
- 100g dried shredded squid (Jinmi-chae)
- 1 tsp coarse sea salt
Spicy and Sweet Seasoning Ingredients- 2 tsp anchovy sauce
- 2 tbsp tuna sauce
- 1 Tbsp plum extract
- 3 Tbsp grain syrup
- 6 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp toasted sesame seeds
- 2 tsp anchovy sauce

Cooking Instructions
Step 1
For the freshest scallion kimchi, I harvested green onions directly from my rooftop garden. Can you feel the freshness?
Step 2
Trim any yellow leaves or dirt from the green onions. Then, pat them dry and precisely weigh out 300g. Fresh ingredients are half the key to deliciousness!
Step 3
Cut the trimmed green onions into bite-sized pieces, about 3-4 cm long. Place the green onions in a large bowl, sprinkle evenly with 1 tsp of coarse sea salt, and let them salt for 30 minutes. Turning them over once during this time helps them salt evenly.
Step 4
While the green onions are salting, let’s make the delicious seasoning! First, combine 2 tsp anchovy sauce, 2 tbsp tuna sauce, and 1 Tbsp plum extract in a bowl and mix well.
Step 5
Add 3 Tbsp of grain syrup here to give it a deep sweetness.
Step 6
Add a generous 6 Tbsp of gochugaru (Korean chili flakes) for a glossy finish and spicy kick.
Step 7
Finally, add 1 Tbsp of toasted sesame seeds for a nutty aroma and mix everything well. Your flavorful seasoning is ready!

Add 100g of dried shredded squid (Jinmi-chae) to the prepared seasoning and mix until the seasoning coats the squid evenly. The dried squid will become even more delicious as it absorbs the flavors.
Step 9
Lightly drain the salted green onions and add them to the large bowl along with the seasoned dried shredded squid.
Step 10
Gently mix the green onions and dried shredded squid to ensure the seasoning is evenly distributed, and your delicious scallion kimchi is complete! The saltiness of the dried shredded squid can vary by product, and personal preference, so taste and adjust the seasoning. If it’s not salty enough, add more anchovy sauce or salt. The secret to success is to initially make the seasoning slightly less salty and then add more if needed. Enjoy your meal!
