- 2 Tbsp soy sauce (main seasoning)
- 1 Tbsp sugar
- 0.5-1 Tbsp plum extract or corn syrup (adjust sweetness)
- 1 Tbsp sesame oil (for marinating rice cakes)
- 1 Tbsp soy sauce (for marinating rice cakes)
- 1 tsp minced garlic
- A little cooking oil (for greasing the pan)
- 2 Tbsp soy sauce (main seasoning)
- 1 Tbsp sugar
- 0.5-1 Tbsp plum extract or corn syrup (adjust sweetness)
Cooking Instructions
Step 1
First, blanch the tteokbokki rice cakes in boiling water for about 1 minute. This softens them and helps them absorb the sauce better. Drain the blanched rice cakes using a sieve, but don’t rinse them with cold water. While they are still warm, toss them with 1 tablespoon of sesame oil and 1 tablespoon of soy sauce. This step adds a subtle savory flavor and prevents the rice cakes from sticking together or becoming too mushy.
Step 2
Now, let’s prepare for stir-frying. Heat a frying pan over medium heat and add a little cooking oil. Add the minced garlic and sauté until fragrant. Once the garlic starts to become aromatic, add the sliced cabbage, carrots, and shiitake mushrooms. Stir-fry the vegetables until they begin to soften slightly. Cooking over medium heat prevents the garlic from burning and helps maintain the vegetables’ texture.
Step 3
Once the vegetables have softened a bit, it’s time to add the delicious seasoning. Mix in 2 tablespoons of soy sauce, 1 tablespoon of sugar, and 0.5 to 1 tablespoon of plum extract or corn syrup, depending on your preferred sweetness. Stir everything together quickly for about 1-2 minutes to ensure the seasonings coat the vegetables evenly. You can adjust the sweetness to your liking.
Step 4
After the vegetables have absorbed the seasoning, add the pre-marinated rice cakes and the chicken breast. Stir-fry everything together for another 2-3 minutes until well combined and the chicken is cooked through. The chicken breast will add richness to the flavors of the rice cakes and vegetables. For an extra layer of flavor, drizzle with a little sesame oil and sprinkle with sesame seeds as a finishing touch.
Step 5
Voila! Your homemade vegetable and chicken breast tteokbokki is ready. Enjoy it while it’s warm to savor the delightful combination of chewy rice cakes, crisp vegetables, and tender chicken breast. It’s a perfect dish for a family meal!
