I made this nostalgic egg bread at the request of my dear daughter. It’s easy to make with simple ingredients and perfect as a breakfast alternative or a delightful snack for kids. The burst of flavor from the vegetables and cheese is simply superb!

Bread and Filling Ingredients

  • 4 Morning Buns (Soft Rolls)
  • Plenty of Mozzarella Cheese
  • Plenty of Cheddar Cheese
  • 2 slices Ham
  • 1/4 Onion
  • 3 Cherry Tomatoes
  • A little Green Onion or Scallion
  • 2 Eggs

Seasoning for Flavor

  • A pinch of Dried Parsley
  • A pinch of Salt
  • 1/2 tsp Sugar

Cooking Instructions

Step 1

First, prepare the vegetables that will enhance the flavor of your egg bread. Finely mince the onion and cherry tomatoes, and thinly slice the green onion or scallion. Dicing the ham into small cubes is also a good idea.

Crack 2 eggs into a bowl. Add the minced vegetables and ham. Season with a pinch of salt and 1/2 tsp of sugar. Whisk everything together until well combined. Gently mix until the egg mixture is slightly beaten.

Carefully cut off the top part of each morning bun with a knife, then gently hollow out the inside to create a cavity. Be careful not to scoop too deep, or the bun might break. Generously fill the created cavity with the prepared egg mixture.

After filling the morning buns with the egg mixture, generously top with mozzarella cheese. As the cheese melts, it will softly bind the bun and the filling together.

On top of the mozzarella cheese, add torn or finely chopped cheddar cheese to enhance the color and flavor. The sight of the cheese melting golden brown is truly exciting!

Finally, sprinkle dried parsley over the top for garnish. The fragrant aroma and beautiful color from the parsley will elevate the presentation of your egg bread.

Now, microwave for about 2-3 minutes. Adjust the time until the cheese is completely melted and the egg is cooked through. Cooking times may vary depending on your microwave’s power. Once the cheese is golden and melted, remove from the microwave. Your warm and delicious egg bread is ready to enjoy!
