Mouthwatering Braised Pork Back Ribs: A Flavorful Korean Delight

Inspired by a TV cooking show, I decided to try making pork back ribs at home. This recipe creates a wonderfully tender and flavorful dish that’s perfect for sharing with family and friends. The savory-sweet and slightly spicy sauce is absolutely irresistible!
Main Ingredients- Pork Back Ribs: 1 rack (approx. 1kg)
- Doenjang (Korean Soybean Paste): 2 Tbsp (for parboiling)
- Soaked Glass Noodles: A portion (approx. 100g)
Parboiling Ingredients- Doenjang (Korean Soybean Paste): 2 Tbsp
- Bay Leaves: 6-7
- Whole Peppercorns: 1 Tbsp
- Soju or Mirin (Rice Wine): 2 Tbsp
Vegetables- Scallions (Green Onions): 2 stalks
- Green Chili Peppers: 2
- Red Chili Pepper: 1
Savory & Spicy Sauce- Pork Rib Broth: 7 cups (approx. 1.4L)
- Gochugaru (Korean Chili Flakes): 3 cups (approx. 150g)
- Teriyaki Sauce (store-bought): 3 cups (approx. 600ml)
- Minced Garlic: 1 Tbsp
- Pear Juice (store-bought): 1 pack (approx. 100ml)
- Perilla Oil (or Sesame Oil): 1 Tbsp
- Dashida (Korean Broth Powder) or MSG: 1 tsp

Cooking Instructions
Step 1
First, rinse the pork back ribs thoroughly under cold running water to remove any blood. In a large pot, cover the ribs with water. Add 2 Tbsp doenjang, bay leaves, whole peppercorns, and 2 Tbsp soju or mirin. Bring to a boil over high heat, then reduce heat and simmer for 30 minutes to remove impurities.
Step 2
After parboiling, carefully wash each rib under cold water, making sure to clean between the bones and meat to remove any remaining scum. Return the cleaned ribs to the pot. Add 2 Tbsp doenjang dissolved in water (or use some of the pork rib broth). Bring to a simmer over medium heat and cook for 1.5 hours, or until the meat is very tender.
Step 3
Prepare your vegetables. Slice the scallions diagonally. Slice the green and red chili peppers diagonally as well; these will add a touch of heat and vibrant color to the dish.
Step 4
For the best flavor, soak the glass noodles in lukewarm water for about 30 minutes before you start cooking. Drain them just before adding them to the pot so they absorb the sauce beautifully.
Step 5
After simmering for 1.5 hours, the pork back ribs are perfectly tender! Don’t discard the cooking liquid – this rich broth is the secret to a flavorful sauce.
Step 6
Now, let’s make the delicious sauce. In a large bowl, combine 3 cups gochugaru, 3 cups teriyaki sauce, 1 Tbsp minced garlic, 1 pack pear juice, 1 Tbsp perilla oil, and 1 tsp Dashida or MSG. Taste and adjust seasoning with salt or more teriyaki sauce if needed.
Step 7
Remove the cooked ribs from the pot. Pour 7 cups of the reserved pork rib broth into the pot and stir in 4-5 cups of the prepared sauce. Bring the sauce to a boil, then add the pork ribs back in. Simmer over medium-low heat for about 10 minutes, allowing the ribs to absorb the flavors.
Step 8
Once the ribs have absorbed some of the sauce, add the soaked glass noodles to the pot. Cook them together with the ribs until they are tender and have soaked up the delicious sauce.
Step 9
Finally, add the sliced scallions and chili peppers. Simmer for a few more minutes until everything is heated through. Your delicious and savory pork back ribs are ready to be enjoyed!
