Happy Saturday! Wondering what to cook today? We decided to make a mushroom stir-fry using king oyster mushrooms, which my husband and I love. We bought butter, king oyster mushrooms, and green onions from the market. Let’s start my first mushroom butter stir-fry!

Ingredients
  • 1 pack King Oyster Mushrooms
  • 4 Green Onions
  • 7 cloves Garlic
  • 2 Tbsp Butter
  • 1.5 Tbsp Oligodang (Korean corn syrup)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Water

Cooking Instructions

Step 1

1. First, wash the king oyster mushrooms thoroughly and then cut them into roughly 2cm thick pieces. Cutting them into generous pieces will give them a better bite.

Step 2

2. Score the cut sides of the king oyster mushrooms with a knife. This allows the sauce to penetrate deeply into the mushrooms, making them much more flavorful. (Be careful not to cut too deep!)

Step 3

(Optional) 3. If you’d like to add more garlic flavor, thinly slice 7 cloves of garlic and set them aside. Slicing and cooking them separately later with the mushrooms will create a wonderfully sweet and savory taste.

4. Heat a pan over medium heat and add 2 tablespoons of butter. Be mindful of the heat to prevent the butter from burning.

Step 5

5. Once the butter is melted and starts to foam, add all the scored king oyster mushrooms to the pan. Cook them slowly over medium-low heat, allowing them to brown nicely and absorb the buttery flavor. Once the mushroom surfaces are golden brown and cooked, remove them to a separate plate temporarily.

Step 6

6. Now, let’s make the delicious butter sauce! Finely chop the washed green onions. Mince the prepared garlic. (If you sliced and cooked the garlic separately, you can skip this step or add minced garlic according to your preference.)

Step 7

7. In the same pan used for the mushrooms, add 2 Tbsp soy sauce, 1.5 Tbsp oligodang, and 1 Tbsp water. Simmer over low heat until the ingredients are well combined and have a subtle sheen. This simmering is key!

Step 8

8. Once the sauce has thickened slightly, return the cooked king oyster mushrooms to the pan. Gently toss them to ensure the sauce coats the mushrooms evenly.

Step 9

9. Has the sauce coated the mushrooms beautifully? Carefully transfer the buttery, coated king oyster mushrooms to a nice serving dish.

Step 10

10. Don’t discard any delicious sauce left in the pan! Scrape it all out with a spoon and generously top the mushrooms. If you cooked garlic slices separately, adding them on top will create an even richer flavor. Your delicious King Oyster Mushroom Butter Stir-fry is ready!
