Hello everyone! Today, we’re making four types of mini mushroom pizzas using Gyeonggi Province’s new mushroom variety. The Santa-ri King Oyster Mushroom (also known as ‘meat oyster mushroom’) is famous for its meat-like texture and flavor. We’ll be making these mini pizzas without any actual meat, leveraging the mushroom’s unique taste. These pizzas are perfect for vegetarians and as healthy snacks for children!

Cooking Instructions
Step 1
Our first mini pizza is the ‘Sweet Pumpkin Mushroom Pizza’! Today, I’m using the Santa-ri King Oyster Mushroom, a new variety developed by the Gyeonggi Agricultural Research and Extension Services. This mushroom is renowned for its meat-like texture and rich umami, allowing us to create a satisfying dish without actual meat. It’s a fantastic choice for vegetarians, health-conscious individuals, and even kids!
Step 2
First, finely chop your nuts. Wash the mini pumpkin thoroughly, then place it in a steamer basket over boiling water. Steam for about 15 minutes, or until it’s tender when pierced with a fork.
Step 3
While the pumpkin is still warm, carefully peel it and mash it in a bowl. Add 1 Tbsp of milk (or soy milk), 1 Tbsp of mayonnaise, a pinch of salt, and the chopped nuts. Mix everything together well to create a smooth and slightly sweet pumpkin spread.
Step 4
Lay one mini tortilla flat on an oven tray or an air fryer basket. Spread 1 tsp of butter evenly over the surface of the tortilla. Next, generously spread the prepared pumpkin mixture over the buttered tortilla. Arrange the Santa-ri King Oyster Mushroom slices on top.
Step 5
Preheat your air fryer to 180°C (350°F). Place the prepared pizza inside and cook for about 10 minutes. You’ll achieve a delightful combination of the crunchy nuts and the chewy, meaty texture of the mushroom. This Sweet Pumpkin Mushroom Pizza is highly recommended!
Step 6
Now for our second pizza: ‘Bulgogi Mushroom Pizza’. Finely chop the green onion and Korean green chili pepper. Lightly rinse the Santa-ri King Oyster Mushroom under running water. These mushrooms are cultivated so cleanly that they rarely need extensive washing.
Step 7
Let’s prepare the bulgogi marinade: In a bowl, combine 4 Tbsp soy sauce, 1.5 Tbsp sugar, 2 Tbsp minced garlic, 2 Tbsp cooking wine (mirin), 2 Tbsp sesame oil, a pinch of black pepper, and 2 Tbsp water. Mix well. In a pot, add the marinade and the mushrooms. Simmer over medium heat for about 5 minutes, allowing the mushrooms to absorb the flavorful sauce. Be careful not to overcook, as the mushrooms can become tough.
Step 8
In a separate bowl, mix 50g of cooked rice with 2 Tbsp of the bulgogi marinade. Add the sliced onion, minced green chili pepper, and chopped green onion. Mix everything thoroughly to create the bulgogi rice base. Feel free to adjust the amount of green chili pepper for more heat.
Step 9
Take a mini tortilla and spread 1 Tbsp of the bulgogi marinade over it. Spread the prepared bulgogi rice evenly on top. Sprinkle a generous layer of mozzarella cheese, followed by the simmered bulgogi mushrooms.

Preheat your air fryer to 180°C (350°F). Bake the pizza for about 15 minutes, until the cheese is melted and bubbly. This Bulgogi Mushroom Pizza offers a delicious savory flavor with the chewy mushrooms.

Moving on to our third pizza: ‘Corn Cheese Mushroom Pizza’. Prepare all your ingredients. Slice the onion thinly and cut the Santa-ri King Oyster Mushroom into bite-sized pieces.

In a bowl, combine the canned corn kernels, sliced mushrooms, sliced onion, 1 Tbsp mayonnaise, and 1 tsp sugar. Mix well to create the corn and mushroom filling. This combination offers a delightful sweetness from the corn and chewiness from the mushrooms.

Spread 1 tsp of butter thinly over a mini tortilla. Drizzle with honey mustard sauce, then add a generous amount of the corn and mushroom filling. Finish by topping with plenty of mozzarella cheese.

Preheat your air fryer to 180°C (350°F) and bake for about 15 minutes. This pizza perfectly replicates the delicious corn cheese flavor often found in restaurants! The sweet pop of the corn kernels and the chewy, meaty texture of the King Oyster Mushrooms create an irresistible taste.

Finally, let’s make our fourth pizza: ‘Tomato Mushroom Pizza’. For this pizza, feel free to add any toppings you desire to customize it to your liking. It’s a simple yet flavorful option.

Finely chop your chosen additional ingredients, such as tomatoes, onions, bell peppers, and sausages. Cutting them into small pieces ensures even cooking and makes the pizza easier to eat.

Spread 1 Tbsp of tomato sauce evenly over a mini tortilla. Arrange your chopped ingredients (vegetables and sausage) on top. Then, add a generous amount of mozzarella cheese, followed by plenty of Santa-ri King Oyster Mushrooms. The deep flavor of the mushrooms pairs wonderfully with the tomato sauce, creating a sophisticated taste.
