Mushroom Pizza Ingredients- 10 fresh button mushrooms
- 1/4 onion
- 1 strip thick-cut bacon
- 2 Tbsp minced green onion (or bell pepper)
- 2 slices cheddar cheese
- 10 sliced black olives
- 1 Tbsp unsalted butter
- Pinch of dried parsley flakes

- 0.5 Tbsp olive oil
- Pinch of black pepper
- 0.5 Tbsp minced garlic

Cooking Instructions
Step 1
First, let’s gather all the ingredients for our delicious mushroom pizza. Chef Lee Jung-hyun’s original recipe uses bell pepper, but I’ve substituted it with minced green onions for a delightful crunch and fresh flavor. Feel free to experiment with other vegetables you enjoy!

Gently remove the stems from the fresh button mushrooms. Carefully peel the outer skin from the mushroom caps for a cleaner presentation and texture.

Finely mince the removed mushroom stems, the onion, green onion, bacon, and garlic. The original recipe calls for garlic powder, but I’ve opted for fresh minced garlic to add a more robust flavor.

For the cheddar cheese, lightly score the surface with the back of a knife or a spatula. This scoring helps the cheese separate easily after removing the plastic wrap, ensuring even melting.

Now, let’s make our pizza sauce! In a small bowl, combine 0.5 Tbsp of minced garlic, 2 Tbsp of ketchup, 0.5 Tbsp of olive oil, and a pinch of black pepper. Mix everything together thoroughly until well combined to create our flavorful pizza sauce.

Melt 0.5 Tbsp of butter in a pot over medium heat. Once the butter is melted, add the minced mushroom stems, onion, green onion, bacon, and garlic. Sauté for about 2 minutes until the ingredients are fragrant and slightly softened, releasing their wonderful aromas.

Reduce the heat to medium-low. Melt the remaining 0.5 Tbsp of butter in a frying pan. Place the cleaned mushroom caps, gill-side down, into the pan and sear for 1 minute. Then, carefully flip them over and immediately turn off the heat. This partial cooking adds a nice texture.

Spread the prepared pizza sauce evenly over the cooked mushroom caps. Next, spoon the sautéed vegetable mixture onto each mushroom. Generously top with the sliced cheddar cheese, and finally, arrange the sliced black olives decoratively on top.

Cover the pan with a lid and cook over very low heat until the cheese is completely melted and bubbly. Be careful not to cook over high heat, as this can burn the mushrooms. Patience is key for that perfect melt!
