Skewers Ingredients- 200g Santa River mushrooms (or King Oyster mushrooms)
- 20g Balsamic vinegar (approx. 2 Tbsp)
- 20g Olive oil (approx. 2 Tbsp)
- 15g Maple syrup (approx. 1.5 Tbsp)
- 3 cloves Garlic (minced)
- 1g Fresh basil (or 1/2 tsp dried basil)
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Cooking Instructions
Step 1
Prepare 200g of fresh Santa River mushrooms (or King Oyster mushrooms) and all the sauce ingredients that will bring out the flavor of the skewers. Mince the garlic finely for best results.
Step 2
Instead of washing the Santa River mushrooms under running water, gently wipe the surface with a slightly damp kitchen towel to remove any dirt or debris. This method helps preserve the mushrooms’ texture and aroma.
Step 3
In a large bowl, combine the balsamic vinegar, olive oil, maple syrup, minced garlic, basil, salt, and pepper. Whisk them together using a whisk or a fork until well blended to create the sauce. Thorough mixing ensures the flavors are evenly distributed onto the mushrooms.
Step 4
Add the cleaned Santa River mushrooms to the prepared sauce and gently toss to coat them evenly. Be careful not to break the mushrooms while mixing. Once coated, cover the bowl with plastic wrap and let them marinate in the refrigerator for about 30 minutes. This marinating step allows the flavors to deeply penetrate the mushrooms, making them even more delicious.
Step 5
Thread the marinated Santa River mushrooms onto skewers in bite-sized pieces. Skewering them makes them easier to cook and serve.
Step 6
Heat a non-stick pan over medium-high heat without adding oil. Place the skewers on the hot pan and grill them on both sides until nicely browned. It’s best to cook them quickly over high heat to prevent excess moisture release from the mushrooms. Grill until the outside is slightly crisp and the inside is tender and juicy for perfectly cooked Santa River mushroom skewers.
