  • 500g fresh mussels
  • 1 large leek
  • 1 Tbsp minced garlic (or 1 Tbsp sliced garlic)
  • 2-3 chili peppers (green or red)
  • 500ml water (enough to cover the mussels)

  • 1/2 Tbsp soy sauce or salt (adjust to taste)
  • Chili-vinegar dipping sauce (for serving)

Step 1

First, thoroughly clean the mussels. Use a brush to scrub off any dirt or barnacles from the shells. Rinse them multiple times under running water to remove any grit or impurities trapped between the shells. (Using a colander can make this process easier.)

Step 2

Chop the leek into bite-sized pieces, separating the white and green parts. Alternatively, you can slice it diagonally into larger pieces. Larger cuts allow the flavor to infuse more deeply into the broth and make the leek easier to eat.

Step 3

Peel the garlic and slice it thinly. While minced garlic is fine, using sliced garlic will result in a clearer and more refreshing broth flavor.

Step 4

Remove the seeds from the chili peppers and slice them. If you enjoy a spicier kick, use green chili peppers. For a bit of heat and color, red chili peppers are also a great choice.

Step 5

In a deep pot, combine the cleaned mussels, chopped leek, sliced garlic, sliced chili peppers, and half a tablespoon of soy sauce or salt. Add enough water to generously cover the mussels. Bring to a boil over high heat.

Step 6

As the soup boils, skim off any foam or scum that rises to the surface with a spoon. This step helps to keep the broth clear and clean. Continue to simmer for about 5-7 minutes, or until the mussels have opened and the broth has become nicely opaque. Taste and adjust the seasoning with more salt or soy sauce if needed.
