Ingredients- 2 Tbsp Perilla Oil (Deulgireum)
- Beef for Stew (e.g., brisket or flank, about 100g)
- 5 Napa Cabbage Leaves (about 300g)
- 1 pack Enoki Mushrooms (about 100g)
- 6 cups Anchovy Broth (with kelp) (approx. 1.2L)
- 1 Tbsp Minced Garlic
- 3 Tbsp Soup Soy Sauce (Guk-ganjang)
- Salt to taste (adjust as needed)
Cooking Instructions
Step 1
First, prepare the essential broth for this delicious Napa Cabbage Soup. Combine 10 dried anchovies and one 5cm piece of kelp in 7 cups of cold water. Bring to a boil and simmer for about 15 minutes to create a rich and clear broth. Once ready, remove the solids, leaving you with pure broth.
Step 2
Now, let’s sauté the beef, which is key to the soup’s flavor. Heat 2 tablespoons of perilla oil in a pot over medium heat. Add the beef for stew and stir-fry until the pink color disappears. Once the beef is fragrant and browned, pour in the prepared 6 cups of anchovy broth. When the soup comes to a boil, use a spoon to skim off any brown impurities floating on the surface. This step ensures a clear and clean broth.
Step 3
Next, it’s time to add the cabbage. Wash the 5 Napa cabbage leaves thoroughly and cut them into bite-sized pieces, about 4-5cm long. Add the cut cabbage to the boiling broth. Pour in 3 tablespoons of soup soy sauce to season. Let the cabbage cook until it turns translucent and tender, which should take about 3-5 minutes.
Step 4
Finally, add the remaining ingredients to complete the soup. Prepare the enoki mushrooms by trimming the base and separating them into strands. Add the prepared enoki mushrooms and 1 tablespoon of minced garlic to the pot with the cabbage. Continue to simmer for a short while until all ingredients are well combined. Taste the soup and adjust the seasoning with salt as needed. Your comforting Napa Cabbage Soup, loved by the whole family, is now ready! Serve it warm for the best flavor.
