Ingredients- 240ml Banana milk or your preferred milk (approx. 1 cup)
- 3 fresh egg yolks
- 50g Granulated sugar (A) (approx. 1/4 cup)
- 10g Granulated sugar (B) (for torching, approx. 1 Tbsp)
- 1 Tbsp Cornstarch
- 1 pinch Salt (balances the sweetness)
Cooking Instructions
Step 1
In a bowl, combine the 3 egg yolks, 50g of sugar (A), and 1 Tbsp of cornstarch. Whisk them together until no dry powder is visible and the mixture is a smooth, pale ivory color. Ensure the cornstarch is fully incorporated to avoid lumps.
Step 2
Gradually pour the warmed milk (banana milk or your chosen milk), about 240ml, into the egg yolk mixture while whisking constantly with a whisk. This helps to temper the eggs and prevent them from scrambling. Whisk gently until everything is well combined.
Step 3
Pour the combined mixture into a saucepan. Cook over low heat, stirring continuously with a spatula or whisk, ensuring you scrape the bottom of the pot. Continue cooking for about 5 minutes, or until the mixture thickens to a custard consistency. Be careful not to boil it vigorously, as this can cause the eggs to cook unevenly.
Step 4
Carefully transfer the warm custard into a piping bag. If you don’t have a piping bag, you can use a spoon or ladle.
Step 5
Prepare your oven-safe ramekins or serving bowls. Fill each one with the custard from the piping bag, filling them about two-thirds full. Avoid overfilling to prevent spills.

Evenly sprinkle the 10g of sugar (B) over the surface of the custard in each ramekin. A thin, even layer of sugar is key for achieving a perfect caramelized crust.
Step 7
Using a culinary torch or a lighter, heat the sugar until it melts and caramelizes. Move the flame continuously to ensure even browning and to prevent burning. You’re looking for a golden-brown, glassy layer. The caramelized topping is best enjoyed immediately after it hardens. Crack it with your spoon and savor the delightful contrast!
