  • 2 slices cooked bacon, finely chopped

Start by thoroughly washing the potatoes. Cut each potato in half lengthwise, then cut each half into 3-4 wedge-shaped pieces. Aim for substantial wedges that won’t crumble easily during cooking.

Place the cut potato wedges in a bowl of cold water and let them soak for about 10 minutes. This step helps remove excess starch, preventing them from sticking to the pan and promoting crispier results. After soaking, drain the potatoes and pat them dry with paper towels.

Heat a non-stick skillet over medium heat. Add 10g of butter (or 1 Tbsp of cooking oil) and 2 Tbsp of cooking oil. Once melted and shimmering, carefully arrange the potato wedges in a single layer in the pan. If you don’t have butter, simply increase the cooking oil to 3 Tbsp.

Cover the skillet with a lid and cook for about 5-7 minutes, until the bottom side is golden brown and tender. Flip the wedges and cook the other side until similarly browned. Finally, tilt the pan and gently roll the wedges to brown the curved sides as well, ensuring they are cooked through and have a nice color all around.

While the potatoes are cooking, let’s prepare the delicious cheese sauce. In a separate clean pan (or wipe out the potato pan), add a little cooking oil over medium heat. Sauté the minced garlic for about 1 minute until fragrant, being careful not to burn it. Pour in the 2/3 cup of milk and bring it to a gentle simmer. Add the 3 slices of cheese and stir continuously over low heat until fully melted and the sauce thickens. Stir in the finely chopped cooked bacon. If the sauce is too thick, add a splash more milk to reach your desired consistency. Taste and adjust seasoning if needed, perhaps adding a bit more cheese for extra richness.
