Delicious Sweet Potato Bread Made Without an Oven
Perfect for when you have an abundance of sweet potatoes and are craving freshly baked bread! Here’s a recipe for moist and chewy sweet potato bread that’s incredibly easy to make, even without an oven. The cooking time for boiling or baking the sweet potatoes has been excluded from the active prep time. I used an air fryer and cooked it for about 50 minutes to an hour on average. It’s delicious right after baking, but it becomes even more delightful as a snack the next day, developing a chewy texture similar to sweet potato jerky.

Prepare your boiled or steamed sweet potatoes. Peel them while they are still warm and mash them thoroughly with a fork or a masher until very smooth. Ensure there are no lumps for a well-mixed batter.

Add the 2 egg yolks to the mashed sweet potato. Use a fork or spatula to mix them together until well combined and the mixture becomes moist.

In a clean bowl, add the 2 egg whites. Using a hand mixer or a whisk, beat the egg whites until stiff peaks form. This means that when you lift the whisk, the peaks should stand up firmly without collapsing.

Gently fold the meringue into the sweet potato and yolk mixture in 2-3 additions. Be careful not to deflate the meringue. Add the sweet potato mixture on top of the meringue and use a spatula to gently fold it in from the bottom upwards. Avoid overmixing, as this can break down the meringue.

Pour the finished sweet potato batter into a microwave-safe dish. Cover it with plastic wrap and poke a few holes with a skewer or fork. Microwave for 3-4 minutes. Check for doneness and if needed, continue microwaving in 1-2 minute intervals until it reaches your desired texture (total of about 5-6 minutes).
