Boiled Pork Recipe Without Water: An Easy and Delicious Method

Ingredients
- 1kg Pork belly or shoulder, suitable for boiling
- 1 Tbsp Doenjang (Korean soybean paste)
- 2 Large onions
- 3 Green onions (mostly the green parts)
- 1 Apple
- 2 Tbsp Minced garlic
Cooking Instructions
Step 1
Prepare a large pot, as you’ll be boiling 1kg of pork. Ensure the pot is spacious enough to hold the pork comfortably, which helps it cook evenly.
Step 2
Peel the two large onions and slice them thickly, crosswise. Lay them evenly on the bottom of the pot. The onions will add natural sweetness and help tenderize the meat while absorbing any unwanted odors.
Step 3
Core the apple and cut it into wedges or chunky pieces. Wash it thoroughly before cutting.
Step 4
Arrange the cut apple pieces on top of the onion layer in the pot. The apple contributes a subtle sweetness and a delightful aroma to the pork.
Step 5
Wash the three green onions. You can use mostly the green parts for their fragrant aroma. Cut them into large sections, about 5-7 cm long, and place half of them into the pot, on top of the other ingredients. These aromatics are key to infusing flavor and removing any gaminess.

You can choose your preferred cut for boiled pork. Pork belly was used here for its rich marbling and tenderness, but pork shoulder or leg are also excellent choices. Cut the meat into substantial pieces to prevent them from falling apart during cooking.
Step 7
Place the prepared pork pieces into the pot, layering them on top of the vegetables. Spread 1 tablespoon of doenjang evenly over the surface of the pork. Doenjang is crucial for adding depth of flavor and eliminating any pork odor.
Step 8
Sprinkle about 2 tablespoons of minced garlic over the pork. The pungent aroma of garlic will further enhance the pork’s savory notes.
Step 9
Finally, add the remaining half of the chopped green onions on top of the pork. As everything cooks together, these ingredients will meld their fragrances into the meat.

Cover the pot tightly with a lid. Reduce the heat to the lowest setting and let it simmer gently for 40 minutes to 1 hour. Slow cooking at a low temperature ensures the pork becomes incredibly tender and moist all the way through. The moisture released from the ingredients will be sufficient for cooking; no additional water is needed.
Step 11
After the cooking time has elapsed, carefully lift the lid. Pierce the thickest part of the pork with a skewer or chopstick. If clear juices run out, the pork is perfectly cooked. If pinkish liquid appears, continue cooking for a little longer.
Step 12
Once cooked, carefully remove the boiled pork from the pot. Let it rest for a few minutes before slicing it into approximately 1cm thick pieces. Your delicious waterless boiled pork is now ready to be enjoyed! Serve with salted shrimp (saeujeot), ssamjang, kimchi, or your favorite accompaniments.
